Cherry Delight

Prepare a graham cracker crust and spread in 9x13 pan
- 3 oz. cream cheese
- 2 lemons (you use juice)
- 1 c. chopped pecans
- 2 envelopes of Dream Whip
- 1 can cherry pie filling
- 1 can Eagle brand milk
Chicken Fajita Salad

Whisk together the first 4 ingredients, 1/4 lime juice and 1 tsp
- 6 T oil
- 4 T chopped cilantro
- 2 tsp. Dijon mustard
- 1 1/2 tsp. sugar
- 2 limes (juiced & zested)
- 1 1/2 lbs. chicken breasts
- 1 package fajita seasoning
- 1 can black beans
- 2 ears of corn
- 1 head romaine lettuce
- 2 large tomatoes
- 1 c shredded Cheddar cheese
- 1 avocado (sliced)
Chili Chicken Salad

Mix onion, garlic, chili powder, cumin, salt and pepper together
- 1/4 c chopped onion
- 1 garlic clove, crushed
- 1 T chili powder
- 1 tsp. cumin
- 1/4 tsp. salt
- 1/8 tsp. black pepper
- 3/4 lbs. boneless, skinless chicken breasts
- 4 c Romaine lettuce
Mama's Chicken Roll Ups

NOTE: The 1/2 soup can is using the empty can of cream of chicken soup to measure
- 2 large chicken breast
- 1 can crescent rolls
- 1 10.5 oz. can cream of chicken soup
- 1/2 soup can of broth (use what the chicken cooked in)
- 1/2 soup can milk
- 1 T. all purpose flour
- 6 oz. shredded sharp cheddar cheese
- pinch of salt and pepper
Raspberry Fruit Dip

Mix together and beat until blended
- 2 jars marshmallow crème
- 2 8 oz. packages of cream cheese
- 1/2 c. raspberry jelly
- NOTE: You can use any flavor of jelly you want for this dip.
Cheese'n Bacon Stuffed Mushrooms

Heat oven to 350 degrees. Remove stems from mushrooms
- 12 large fresh mushrooms
- 4 oz. cream cheese (softened)
- 1 minced garlic clove
- 4 slices bacon (cooked and crumbled)
- 1/2 c. Shredded Cheddar cheese
- 1 t chopped fresh parsley
Baked Potato Soup

Peel potatoes and coarsely mash with fork
- 5 large baking potatoes (baked)
- /4 c. butter
- 1 medium onion (chopped)
- 1/3 c. flour
- 1 quart half and half
- 3 c. milk
- 1 tsp. salt
- 1/8 tsp. ground white pepper
- 2 c. shredded Cheddar cheese
- 8 bacon slices (crumbled and cooked)
Spaghetti Pizza

Cook spaghetti noodles. Drain but DON"T RINSE
- 1 package 7 oz. spaghetti noodles
- 2 eggs
- 1/2 c. milk
- 8 oz. shredded cheddar cheese
- 1 lb. hamburger
- onions to taste
- 1 tsp. oregano
- 1 jar 32 oz. spaghetti sauce
- 1 8 oz. shredded mozzarella cheese
Spinach & Artichoke Dip

Stir ingredients together
- 1 10 oz. box frozen spinach (chopped & thawed)
- 1 14 oz. can artichoke hearts (drained & chopped)
- 1 c. shredded parmesan/romano cheese
- 1/2 c. shredded mozzarella cheese
- 10 oz. prepared Alfredo sauce
- 1 tsp. minced garlic
- 4 oz. softened cream cheese
Pumpkin Trifle

In large bowl, combine cake mix, water, egg and beat on low speed for 30 seconds
- 1 package 14 1/2 oz. gingerbread cake mix
- 1 1/4 c. water
- 1 egg
- 4 c. cold milk (can be fat free)
- 4 packages instant butterscotch pudding mix (can be fat free)
- 1 can pumpkin
- 1 tsp. cinnamon
- 1/4 tsp.nutmeg
- 1/4 tsp.ginger
- 1/4 tsp. allspice
- 1 carton cool whip (thawed) (can use reduced fat)
