Ingredients

    tsp. chili powder

  • 1

    tsp. ground cumin

  • 1

    tsp. minced garlic

  • 1/2

    tsp. oregano

  • 1/2

    tsp. crushed red pepper

  • 1

    lb. ground beef

  • 1/2

    c. onion (chopped)

  • 2

    8 oz. cans tomato sauce

  • 1

    can black beans (drained and rinsed)

  • 1

    can corn (undrained)

  • 1

    can chopped green chiles (undrained)

  • 6

    tortillas

  • 2

    c. shredded Cheddar cheese

Directions

Brown beef and onion in skillet and drain. Add tomato sauce, beans, corn, green chilies and mix well. Stir in all of the spices except red pepper. Bring to a boil. Reduce heat to l1/2 c. low and simmer 5 minutes. Add red pepper to taste. Spread 1/2 c. beef mixture on bottom of greased 9x13 pan. Top with 3 tortillas, overlapping as needed. Layer with 1/2 beef mixture, 1/2 of cheese. Repeat with remaining tortillas beef mixture and cheese. Bake for 15 minutes in 350 degree oven.
