Healthy cookies

preheat oven to 350 degrees
- 3 mashed bananas (ripe)
- 1/3 cup apple sauce
- 2 cups oats
- 1/4 cup almond milk
- 1/2 cup raisins or chocolate chips
- 1 tsp vanilla
- 1 tsp cinnamon.
Pineaplle Salsa

In a bowl stir together all ingredients until combined
- 1 c chopped pineapple
- 1 c chopped peaches
- 2/3 c chopped red bell pepper
- 1/3 c chopped red onion
- 1 small jalapeno seeded and chopped
- 1/4 c cilantro
- 3 T lime juice
- 1 garlic clove (minced)
- 1/8 tsp cayenne pepper
- 3/8 tsp salt
Make-Ahead Mashed Potatoes (for a crowd)

Combine all ingredients mixing well
- 5 lbs. potatoes (cooked and mashed)
- 2 c. sour cream
- 2 3 oz. cream cheese
- salt and pepper
Bacon Wrapped Cheese Appetizers

Quarter biscuits and place cheese cube inside each quarter and close tightly
- 2 lbs. bacon
- 1 package cubed mozzarella cheese
- 1 can of biscuits
White Chocolate Apricot Parfaits

Prepare pudding per directions on box using 1 c milk
- 1 pkg. instant white chocolate pudding mix
- 1 c whipped topping
- 3 cups fresh apricots (sliced)
- 2 T apricot preserves
- 1/4 tsp. cinnamon
- 1/4 c toasted sliced almonds
Quick Coleslaw

Mix mayonnaise, mustard, vinegar and brown sugar together in medium bowl
- 2 T reduced fat mayonnaise
- 2 T white vinegar
- 1/2 T Dijon mustard
- 2 tsp. brown sugar
- salt and pepper to taste
- 2 c shredded cabbage
Paprika Chicken & Salad

In medium bowl, mix kidney beans, lettuce, tomato, yellow pepper and cucumber
- 1 can red kidney beans (rinsed & drained)
- 1/2 small head romaine lettuce (chopped)
- 1 tomato (diced)
- 1 yellow pepper (diced)
- 1/2 cucumber (seeded & diced)
- 1/4 c mayonnaise dressing
- 2 T milk
- 1 T dill
- 1/2 tsp. sugar
- 3 T lemon juice
- salt
- 1/2 tsp. black pepper
- 1/2 tsp. paprika
- 4 chicken breasts
- 1 T oil
Aussie Lamingtons

Grease a 23 cm. square pan
- ICING:
- 6 eggs
- 3/4 c. sugar
- 1 c. self-rising flour
- 1/3 c. corn flour
- 1/3 c. water
- 2 T butter (melted)
- 3 c. coconut
- 4 c. powdered sugar
- 1/3 c. cocoa
- 1 T butter
- 1/2 c. milk
Strawberry, Goat Cheese & Arugula Sandwiches

To prepare vinaigrette: combine olive oil, vinegar, mustard, honey, salt and pepper and set aside
- 2 T olive oil
- 2 tsp white balsamic vinegar
- 1 tsp mustard
- 1 tsp honey
- 1/8 tsp salt
- dash of black pepper
- 4 ounces goat cheese (soft honey)
- 4 English muffins
- 1 c arugula leaves
- 1 c fresh strawberries sliced
- 4 tsp green onions
Vegetable Dip

- 1 c mayonaise (miracle whip)
- 1 sm. sour cream
- 1 pkg of Hidden valley dry mix
