Barbecue Meat Loaf

1.Preheat oven to 350°. Line a rimmed baking sheet with aluminum foil
- 1 pound ground chuck
- 1 pound sweet Italian sausage, casings removed
- 1 1/2 cups panko (Japanese bread crumbs)
- 1/2 cup chopped onion
- 1/2 cup chopped celery
- 2 large eggs, lightly beaten
- 1 tablespoon minced fresh parsley
- 3/4 cup barbecue sauce
- 3 tablespoons Dijon mustard
- 1 tablespoon Worcestershire sauce
- Garnish: fresh parsley
Roasted Butternut Squash

Preheat the oven to 400 degrees F
- 1 large butternut squash (about 3 pounds), peeled and seeded and cut in 1-inch chunks
- 3 tablespoons good olive oil
- 2 teaspoons kosher salt

Sift flour, baking powder, baking soda, salt together
- 3 1/2 c flour
- 1 1/2 tsp baking powder
- 1 tsp baking soda
- 1 tsp salt
- 1/4 # butter (applesauce or lite butter can substitue)
- 1 c sugar
- 1 Tbs and 1 tsp orange zest, fresh
- 2 eggs (can use whites only)
- 2/3 c orange juice
- 2/3 c milk (can use fat free)
- 2/3 c finely chopped apricots
- 2/3 c walnuts
- 3 c cranberries chopped in food processor

Heat a large, ovenproof skillet over medium-high heat with 2 tablespoons of olive oil, 2 turns of the pan

- 1/2 1/2 1/2 cup dry red or white wine
- 1 28-ounce 1 28-ounce 28-ounce can San Marzano tomatoes, crushed by hand
- 1 1 1 ball fresh mozzarella cheese, grated or very thinly sliced, for topping
- A few leaves of basil, torn
