Roasted Parmesan Garlic Carrots

1. Preheat oven to 375'. Line a baking sheet with aluminum foil
- 1 1/2 TBL olive oil
- 1 tsp garlic salt
- 2 pounds whole carrots, peeled
- 1/2 c grated Parmesan cheese, plus additional to taste

1. Combine the peanut butter and honey in a large mixing bowl and stir until smooth
- 1 cup peanut butter, sunflower butter or almond butter
- 2/3 cup honey
- 3 cups rolled oats
- 1/2 cup ground flaxseeds or chia seeds
- 2/3 cup mini chocolate chips
- 1 cup any combination of nuts, seeds and soft dried fruit (sunflower seeds, raisins, dried cranberries, etc)

- 1 T milk
- 1 tsp nutmeg (or lemon)
- 1 tsp vanilla
- 4 c all purpose flour (My Mawmaw was very specific about the flour being sifted 3 times!)
