- 1 large white onion, diced
- 4 medium carrots, peeled, thinly sliced into circles
- 3 medium ribs celery, thinly sliced
- 1 large Idaho potato, peeled and diced
- 1 heaping cup fresh or frozen corn kernels
- 1 1/2 cups of crushed tomatoes
- 1 sprig each parsley, sage & oregano, tied into a sachet (optional)
