"A big oven-baked omelet stuffed with bacon, cheese, tomatoes, olives and mushrooms
- 10 eggs
- 1/3 cup milk
- 1/2 teaspoon salt
- 4 dashes hot pepper sauce, or to taste
- 1/2 pound bacon - cooked, and chopped into bite-size pieces
- 1 (4 ounce) can black olives, drained
- 2 roma (plum) tomatoes, chopped(can omit)
- 1/4 cup green onions, chopped
- 1/3 cup mushrooms, sliced
- 3/4 cup Colby-Monterey Jack cheese, shredded/any type w/extra for garnish.
- Sautee some or all of the veg.
Blackened Chicken Pizza with Yellow Tomato Salsa

- 1 1/2 tablespoons paprika
- 1 tablespoon garlic powder
- 3 teaspoons salt
- 1 1/2 teaspoons freshly ground black pepper
- 1 1/2 teaspoons onion powder
- 1 1/2 teaspoons dried thyme
- 1 1/2 teaspoons dried oregano
- 1 teaspoon cayenne pepper
- 1 pound skinless, boneless chicken breast halves - cut into 1 inch strips
- 3 tablespoons canola oil
- 2 yellow pear tomatoes, stems removed
- 1/4 cup chopped red onion
- 1 fresh jalapeno pepper, seeded and chopped
- 1 clove garlic, crushed
- 3 tablespoons chopped fresh cilantro
- 1/2 lime, zested and juiced
- salt and freshly ground black pepper to taste
- 1 pre-baked thin pizza crust
- 8 ounces shredded pepperjack cheese

- 1 (7 ounce) can chipotle peppers in adobo sauce
- 1 cup mayonnaise
- 2 tablespoons milk
- 1 1/2 cups chunky blue cheese dressing
- Can add cream cheese and/or sour cream, and/or the entire bottle of dressing.
- Can add crumbled bleu cheese.
- Can reduce the amount of chipotle.
- Can substitute type of peppers.
