Crumble-Top Pumpkin Muffins

PREHEAT oven to 400° F. Paper-line or grease 24 muffin cups
- FOR STREUSEL TOPPING:
- 4 cups all-purpose baking mix
- 1 cup raisins, (optional)
- 2/3 cup quick or old-fashioned oats
- 2/3 cup granulated sugar
- 1 teaspoon ground cinnamon
- 1 can (30 oz.) LIBBY'S® Easy Pumpkin Pie Mix
- 2 large eggs
- Streusel topping (recipe follows)
- COMBINE 3 tablespoons all-purpose flour, 3 tablespoons granulated sugar and 3/4 teaspoon ground cinnamon in small bowl. Cut in 2 tablespoons butter with pastry blender or two knives until mixture is crumbly.
Green Garbanzo Bean Salad

Combine all ingredients in a large bowl
- 2 (15-ounce) cans garbanzo beans, drained and rinsed
- 1 (15-ounce) can black olives, drained and rinsed
- 2 cucumbers, halved lengthwise, seeded, and sliced crosswise
- 12 cherry tomatoes, halved
- 1/4 red onion, chopped
- 2 cloves garlic, minced
- 1 ounce feta cheese, crumbled (1/4 cup)
- 1/2 cup Italian dressing
- 2 tablespoons fresh lemon juice
- 1/2 teaspoon garlic salt
- 1/2 teaspoon black pepper

Meatball "Pizza" Casserole

PREPARE Basic Meatballs as directed, except use 1 lb
- 1 recipe Basic Meatballs
- 2 cans (11 oz. each) refrigerated thin crust pizza dough
- 1 can (15 oz.) pizza sauce
- 1/2 cup chopped green peppers
- 1-1/2 cups KRAFT Shredded Mozzarella Cheese with a TOUCH OF PHILADELPHIA
- 1/4 cup KRAFT Grated Parmesan Cheese
Slow Cooker Eggplant Parmesan

Place eggplant slices in a large bowl in layers, sprinkling each layer with salt

- 1/2 cup milk

- 1 cup grated parmesan cheese
- 3/4 cup heavy cream

•Heat extra virgin olive oil on MED-LOW in stockpot; add garlic and mirepoix
- 1/4 cup Extra virgin Oil
- 4 Peeled Garlic, minced
- 1 container (7 oz) Diced Mirepoix
- 1 can (6 oz) Tomato Paste
- 4 Food You Feel Good About Bay Leaves, or 2 dried bay leaves
- 1 cup red wine
- 1 pkg (13.2 oz) Meatless Beef Style Crumbles
- 1 pkg (13.2 oz) Meatless Sausage Style Crumbles
- 2 cans (28 oz each) Coarse Ground Tomatoes
- 1 can (28 oz) Diced Tomatoes
- 1 cup water
- 1 1/2 tsp dried oregano
- 1 Spaghetti squash (2-3 lbs), halved stem to blossom end, seeded
- Salt and pepper
- 3 Tbsp Extra Virgin Olive Oil
- 1 1/2 Tbsp chopped Italian Parsley
- 1 1/2 Tbsp chopped Basil
- Parmigiano-Reggiano Grated Cheese for garnish
