Tortellini with Snap Peas & Pesto

Give this winning side dish a go, the cheese tortellini, snap peas and touch of refreshing mint is always a hit!
- 1 (9-ounce) package refrigerated three-cheese tortellini (such as Buitoni)
- 8 ounces sugar snap peas, trimmed and halved diagonally (about 1 1/2-cups)
- 1 cup fresh mint leaves
- 1 cup fresh basil leaves
- 3 tablespoons sliced almonds, toasted
- 2 tablespoons grated Parmesan cheese
- 1 teaspoon grated lemon rind
- 1/4 teaspoon freshly ground black pepper
- 1/8 teaspoon kosher salt
- 1 garlic clove, minced
- 3 tablespoons olive oil
- 1 tablespoon fresh lemon juice
Browned Butter Gnocchi with Broccoli and Nuts

1. Cook gnocchi in a large Dutch oven according to package directions
- 2 (16-ounce) packages prepared gnocchi
- 5 cups chopped broccoli florets
- 2 tablespoons unsalted butter
- 2 tablespoons extra-virgin olive oil
- 1/4 teaspoon freshly ground black pepper
- 3 tablespoons pine nuts, toasted
- 1.5 ounces shaved fresh pecorino Romano cheese (about 1/3 cup)

- 1 cup sugar
- 1/4 cup molasses
- 1 egg
- 2 cups flour
- 2 tsp baking powder
- 1 tsp cinnamon
- 1/2 tsp cloves
- 1/2 tsp ginger
- 1/2 tsp salt
Cool Whip Fruit Salad

Mix all fruit altogether with the vanilla pudding, then fold in cool whip
- 1 can Crushed Pineapple w/Juice
- 1 can Mandarin Oranges – drained
- 1 can Fruit Cocktail – drained
- 1 cup seedless red grapes halved
- 3-4 bananas slice and halved
- 1 – 6oz. Instant Vanilla Pudding
- 1 – 12 oz. Cool Whip
Pasta with Pancetta and Lentils

Bring a large pot of salted water to a boil
- Kosher salt
- 12 ounces bucatini or spaghetti
- 2 tablespoons olive oil, plus more for drizzling
- 1/2 cup finely chopped pancetta (about 2 ounces)
- 1/2 cup finely chopped onion
- 4 cloves garlic, thinly sliced
- 1/2 teaspoon red pepper flakes
- 1 14-ounce can lentils, drained
- 1 28-ounce can whole plum tomatoes, crushed by hand
- 8 basil leaves, roughly chopped, plus more for topping
- 1/2 cup grated parmesan
Crock Pot Tofurky

Empty packet of soup mix into crock pot
- 1 Tofurky Roast (can be frozen)
- 1 can cranberry sauce (chunky or smooth)
- 1 package dry vegetarian onion soup mix* instead of using this I used a can of mushroom soup. This was thick and seasoned so it infused flavor into the roast and kept it moist.
- 16 ounces vegetable broth
- 1 Tablespoon garlic powder (optional) I love garlic, fresh garlic lightly sautéed adds tons of flavor as well. Chopped onions are also awesome.

For the brownies: Preheat the oven to 375 degrees F
- Icing:
- Cooking spray
- 1 1/2 sticks (12 tablespoons) unsalted butter
- 4 ounces unsweetened chocolate
- 3 large eggs, room temperature
- 1 1/2 cups granulated sugar
- 1 teaspoon instant espresso powder
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 teaspoon kosher salt
- 1 1/2 cups dark chocolate chips
- 2 tablespoons buttermilk
- 1 tablespoon brewed coffee
- 1/2 cup confectioners' sugar
- 3 tablespoons unsweetened cocoa powder

CHIPOTLE VEGGIE BURRITOS

Puree all but 3 tablespoons cilantro with 2 cups water, the garlic, chile powder and 3/4 teaspoon salt in a blender...
- 1 bunch cilantro, chopped
- 1 clove garlic
- 1/2 teaspoon chipotle chile powder, plus more to taste
- Kosher salt
- 1 cup white rice
- 1 15 -ounce can black bean soup (preferably spicy)
- 1 10 -ounce package frozen chopped spinach, thawed and squeezed dry
- 2 cups frozen corn (preferably fire-roasted), thawed
- 1 large tomato, diced
- Juice of 1 lime
- 4 burrito-size flour tortillas
- 2 cups shredded pepper jack cheese (about 8 ounces)
