Oatmeal Raisin Cookies

-Beat butter and sugars until creamy
- 2 sticks butter – softened
- 1 cup brown sugar
- 1/2 cup sugar
- 2 eggs
- 1 tsp. vanilla
- 1 1/2 cups all purpose flour
- 1 tsp. baking soda
- 1 tsp. cinnamon
- 1/2 tsp. salt
- 3 cups oats
- raisins/nuts
Low Sugar Flax Chocolate Chip Cookies

Preheat oven to 375. Bake 9-11 minutes
- 2 3/4 cups flour
- 1/2 cup flaxseed meal (rounded)
- 1 tsp. baking soda
- 3/4 tsp. salt
- 3/4 cup butter

- 1 tsp. vanilla
- 2 eggs
- 2 cups choco chips

- 8 large eggs
- 2 cups milk
- 1/2 cup heavy whipping cream
- 3/4 cup granulated sugar or honey granules
- 2 Tbs. pure vanilla extract
- Pure maple syrup, warmed
- Streusel Topping:1/2 cup whole wheat flour
- 1/2 cup brown sugar or Sucanat sugar
- 1 tsp. ground cinnamon
- 1/4 tsp. sea salt
- 1/2 cup (1 stick) cold butter, cut up
Grilled Greek-Salad Skewers

- 1 lemon, cut into 6 wedges
- 2 slices (1" thick) Italian bread, cut into 16 cubes (1")

- 1 can (14 oz) artichoke hearts, drained and halved lengthwise
- 1/2 small red onion, cut into 1" cubes
- 20 inner leaves romaine
- 1 small cucumber, sliced

- 1 1/4 cups light brown sugar
- 3/4 cup shortening
- 2 Tbsp. milk
- 1 Tbsp. vanilla
- 2 eggs
- 1 3/4 cups all purpose flour
- 3/4 tsp. baking soda
- 1 tsp. salt
- 1 cup semi-sweet chocolate chips
- 1 cup coarsely chopped pecans
- (if omitting nuts and additional 1/2 cup chips)
Quinoa Salad

Directions: Cook quinoa according to package directions
- Ingredients For Salad:
- 2 cups uncooked quinoa
- 1 tsp Better Than Bouillon
- 1/4 tsp cumin
- 1 Lb grilled chicken, chopped
- 1 red bell pepper, diced
- 1/2 cup green onions, thinly sliced
- 1 cup chopped cilantro
- 1 15 oz can black beans, drained and rinsed
- 1 1/2 cups frozen corn, semi thawed
- 2 Hass avocados
- Ingredients For Dressing:
- 3 Tbs extra virgin olive oil
- 3 Tbs lemon juice
- 3 Tbs rice vinegar
- 1 Tbs sugar
- 1/2 tsp kosher salt
- 1/2 tsp cumin
- 1/2 tsp chili powder
- Whisk all ingredients in a small bowl and set aside

Cook the quinoa according to package instructions
- 1 cup quinoa
- 1 red onion, chopped
- 3 cloves garlic, minced
- half a red bell pepper, chopped
- half a green bell pepper, chopped
- half a yellow bell pepper, chopped
- 1 1/2 teaspoon cumin
- 1/2 teaspoon oregano
- 1-2 teaspoons chili powder, depending heat preferences
- dash cayenne pepper
- 1 -15 ounce can black beans, drained
- 3/4 cup diced tomatoes (fresh or canned)
- 2 limes
- salt and pepper, to taste
- 6-8 ounces baby spinach
- 1 bunch cilantro
- 1/3 cup cheddar or feta cheese
- 1 avocado, diced
