Lobster Mac-n-Cheese

Preheat the oven to 375 degrees F
- Ingredients:
- 1 lb cavatappi or elbow macaroni
- 8 tbsp (1 stick) unsalted butter, divided
- 1/2 cup all-purpose flour
- 4 cups milk (skim is fine)
- 12 oz Gruyere cheese, grated (4 cups)
- 8 oz extra-sharp Cheddar, grated (2 cups)
- 1 tsp Kosher salt
- 1/2 tsp freshly ground black pepper
- 1/4 tsp nutmeg
- 1 1/2 lbs cooked lobster meat, cut into 1/2-inch chunks
- 1 cup Panko bread crumbs

- 1 cup all-purpose flour, divided
- 1/2 cup 2% milk
- 1/3 cup beer or nonalcoholic beer
- 2 cups crushed unsalted top saltines (about 40)
- 4 cod fillets (6 ounces each)
- Oil for deep-fat frying
