Peach Pound Cake

Preheat oven to 350F. Grease and flour a 10-inch fluted tube pan
- 1 cup butter, softened
- 2 cups granulated sugar
- 6 eggs
- 1 teaspoon almond extract
- 1 teaspoon vanilla extract
- 3 cups all-purpose flour
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup sour cream
- 3 cups diced peaches (fresh or frozen that have been thawed and drained) Confectioners' sugar
Chicken Marsala (Olive Garden-Official Recipe)

POUND chicken breasts between sheets of plastic wrap until about 1/4" thickness
- 4 boneless skinless chicken breasts
- 1/2 cup flour
- salt
- pepper
- dried oregano
- 4 tablespoons oil
- 4 tablespoons butter or 4 tablespoons margarine
- 2 cups fresh mushrooms , sliced
- 1 cup marsala wine

Serve. hot. Serve with melted butter and sprinkle with cinnamon and sugar
- 1/2 lb butter (melted) in a heavy pan
- Add: 3/4 cup of flour; mix with a whisk; then boil 1-2 minutes, stirring constantly
- Add: 1 quart of mil; continue stirring; then add 1/3 cup sugar; continue stirring until it bubbles. Then it is done cooking.
Hot Pepperoni Cheese Dip

Preheat oven to 350 degrees
- 1 envelope Lipton Savory Herb w/Garlic Soup Mix
- 1 16-oz sour cream
- 1 cup ricotta cheese
- 1 cup mozzarella cheese
- 1/4 cup chopped pepperoni
- 1 loaf Italian or French bread
Black Bean and Corn Salad

Combine all ingredients in a bowl
- 1 can, 14 ounces, black beans, rinsed and drained
- 2 cups frozen corn kernels
- 1 small red bell pepper, seeded and chopped
- 1/2 red onion, chopped
- 1 1/2 teaspoons ground cumin, half a palm full
- 2 teaspoons hot sauce, just eyeball the amount (recommended: Tabasco)
- 1 lime, juiced
- 2 tablespoons vegetable or olive oil, eyeball it
- Salt and pepper
