Raw Vegan Alfredo Sauce

1. Blend all ingredients in a blender, preferably a Vita-Mix, for about 60 seconds, or until smooth as possible
- 1 1/4 cup water
- 1 cup macadamia nuts
- 1 TB. freshly squeezed lemon juice
- 2 tsp. nama shoyu or soy sauce
- 1 1/2 tsp. garlic, minced
- 1/2 tsp. raw apple cider vinegar
- 1 1/2 tsp. nutritional yeast
- Pinch cayenne
- 1/8 tsp. salt or to taste
- 1/8 tsp. freshly ground black pepper
Nutella-banana loaf cake

Preheat the oven to 160C fan oven/170C
- 150 g/ 2/3 cup/1.25 sticks butter
- 175 g/ 3/4 cup sugar
- 3 eggs
- 175 g/ 1.4 cups self-raising flour
- 1 tsp baking powder
- 1 tbsp cocoa powder
- 300 g/10.5 oz Nutella
- 2 medium bananas, very ripe, mashed
Vegan Pesto

In a blender or food processor, pulse to grind almonds and pine nuts finely (do not puree)
- 2/3 cup raw almonds
- 2/3 cup pine nuts
- 1 cup fresh basil leaves, packed
- 2/3 cup fresh parsley or cilantro leaves, packed
- 3 garlic cloves
- 2 teaspoons Braggs Liquid Aminos
- 2 tablespoons lemon juice
- 1/2 cup chopped tomato
Vegan Black Bean Burgers

Heat frozen vegetables in a microwave safe dish for about 5 minutes (or until thawed)
- 2 (14 oz.) cans black beans
- 1 1/2 cups quick oats
- 2 TB cornstarch
- 1 TB apple cider vinegar
- 1 cup frozen mixed vegetables
- 3/4 cup garlic instant mashed potato mix
- 1 1/2 teaspoons black pepper
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon thyme
- 1 teaspoon garlic powder
- 2 teaspoons seasoning salt (more for final sprinkling too)
- 2 TB canola oil (or olive oil)
- unbleached all purpose flour (for coating)
Surrey's Cafe - Bananas Foster French Toast

In a hot pot over medium heat, melt butter and brown sugar with the vanilla
- Bananas Foster Mix:
- 3 bananas
- 4 cups dark brown sugar
- 8 ounces cream cheese, softened
- 2 tablespoons vanilla extract
- Directions
- Add all ingredients except 1 banana and thoroughly mix with the hand held blender until it is well combined and uniform.
- French Toast Batter:
- 2 eggs
- 1 teaspoon vanilla extract
- 2 tablespoons sugar
- 1 cup half-and-half
- Whip eggs and sugar with a whisk. Add vanilla and whisk until sugar has completely dissolved. Continue to whisk while adding the half-and-half.
- Bananas Foster Sauce:
- 1 pound butter
- 3 ounces dark brown sugar
- 1/2 tablespoon vanilla extract
- 1/4 cup rum
- 2 ounces heavy cream
- Oil
- 1 loaf French bread, cut in 4 pieces
- Powdered sugar, for garnish

1. Preheat oven to 350 degrees F
- 3 tablespoons vegan butter
- 4 tablespoons all-purpose flour
- 2 cups plain nondairy milk
- 3/4 teaspoon salt
- 1/4 teaspoon black pepper
- pinch ground nutmeg
- dash hot pepper sauce
- 2 (14 ounce) cans artichoke hearts, well drained
- 1 (10 ounce) package frozen spinach, thawed and drained
- 3 cloves garlic

Put 1 1/2 cups of the milk, the sugar, and the cocoa in a nonreactive saucepan
- 2 cups whole milk
- 1/2 cup sugar
- 1/3 cup natural cocoa powder
- 4 teaspoons cornstarch
- 3 large egg yolks
- 2 teaspoons pure vanilla extract
- 1/4 teaspoon fine salt
- 3/4 cup whipping cream

1.Drain and rinse the black beans, setting aside l tablespoon for garnish
- 1 15.5-ounce can black beans
- 1/3 cup medium-hot salsa, 1 tablespoon for garnish
- 1/4 cup cilantro leaves, plus extra for garnish (optional)
- 4 teaspoons fresh lemon juice
- l small garlic clove, minced

Saute the eggplant in a large frying pan with a little olive oil and salt until it’s soft
- 3 medium eggplants, diced into 1/2 inch pieces
- 1 medium onion, chopped
- 1 cup tomato puree
- 2 tbsp. sugar
- 2 tbsp. balsamic vinegar
- 3 stalks celery, diced
- 1/4 cup sliced black olives
- 3 tbsp. chopped parsley
- 2 tbsp. capers
- salt and pepper to taste

- 2 tablespoons Traditional Spicy Sambal or store-bought sambal
- 1/2 cup rice wine vinegar
- 1/2 cup soy sauce
- 1 teaspoon sesame oil
- 3 scallions, thinly sliced
- Directions
- In a small bowl combine the sambal, vinegar, soy sauce, sesame oil, and scallions. Mix and use or store.
