Quick Mushroom Gravy

Heat a medium sauce pan and add half of the Olive Oil
- 1 oz Extra virgin olive oil
- 1 (8oz) container of sliced Button mushrooms, chopped
- 2 Shallots, minced
- 1/4 Cup Flour
- 1 tsp. Dry thyme
- 3 Cups "Better Than Bouillon" No Beef-Beef stock or Strong Vegetable Stock
- Salt and pepper to taste
Garlic Chive Drop Biscuits (gluten free, vegan)

Heat oven to 350* and prepare a baking sheet
- 1/2 c millet flour-(grind millet in bullet)
- 1/2 c sorghum flour-(I used brown rice flour)
- 1/2 c mung bean flour (or other bean flour)
- 1/4 c arrowroot starch
- 2 tsp baking powder
- 1 tsp salt
- 1 1/2 tsp garlic powder
- 1 heaping Tbsp chia seeds + 1/4 c warm water
- 1/4 c olive oil
- 1/4 c dry or fresh chives, minced
- 1-2 garlic cloves, minced
- 1/4 t vitamin C crystals* + 1/2 c boiling water
- *substitute 1 Tbsp lemon juice or Apple Cider Vinegar
Spicy Vegetable Stir-Fry

Have all the vegetables and aromatics prepared and ready to cook
- 1 large onion, peeled and sliced
- 1 medium carrot, peeled and sliced on the diagonal
- 2 garlic cloves, peeled and chopped
- 3 cm knob of fresh root ginger, peeled and cut into matchsticks
- 100 g shitake mushrooms, cleaned and sliced
- 1 red pepper, cored, deseeded and cut into strips
- 1 small head of broccoli, trimmed and cut into tiny florets
- 3 green onion, trimmed and cut into finger lengths
- 2 tbsp vegetable or groundnut oil
- SAUCE
- 3 tbsp vegetable stock
- 2 tbsp light soy sauce
- 1 tbsp agave nectar
- 2 tsp corn flour, mixed with 3 tbsp water
- Pinch of dried chili flakes
Chocolate Caramel Tart

- 1 1/4 cups all-purpose flour
- 1/4 cup unsweetened cocoa powder
- 16 Tbs. (2 sticks) unsalted butter, cut into pieces
- 1/2 cup plus 1 Tbs. confectioners’ sugar
- 1 egg yolk
- 1 tsp. vanilla extract
- 1/2 cup water
- 2 cups granulated sugar
- 1/4 cup light corn syrup
- 2 cups plus 2 Tbs. heavy cream
- 10 oz. semisweet chocolate, chopped
- Fleur de sel for garnish
Coconut Pie

Save out a little milk. Put the rest of the milk in a double boiler and heat
- 3 cups milk
- 3 egg yolks (save whites for meringue)
- Sprinkle of salt
- 3/4 cup sugar
- 4 Tbsp. cornstarch
- 1 tsp vanilla
- Approximately 1/4 cup coconut flakes (I don't measure the coconut, Norma says)
- Prepared pie crust

- Dressing:
- 1/2 cup of apple cider vinegar
- 1/2 cup of red wine vinegar
- 1/4 cup of olive oil or vegetable oil
- 1/2 cup of granulated sugar
- 2 teaspoons of kosher salt
- 2 teaspoons of spicy dry mustard (like Colman's)
- 2 teaspoons of celery seed
- 1/2 teaspoon of Cajun seasoning (like Slap Ya Mama)
- Slaw:
- 1 large head of cabbage (about 2 pounds), sliced thin
- 1 small red onion, cut in half and sliced thin
- 1 medium green bell pepper, cut into thin strips
- 1/2 cup of chopped, sliced pickled jalapeno
- Kosher salt and freshly cracked black pepper, to taste

- 2 1/2 cups cake flour

- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1 tablespoon vinegar
- Icing:
- 1 (8-ounce) package cream cheese
- 1 stick butter, softened
- 1 cup melted marshmallows
- 1 (1-pound) box confectioners' sugar

- 1/2 cup finely chopped pecans

- 1 (3.9 ounce) package instant chocolate pudding mix

- 1 (9-inch) frozen piecrust, thawed for about 10 to 15 minutes
- 1 1/2 cups grated Parmesan cheese, divided
- 2 tablespoons butter
- 2 tablespoons olive oil
- 1 cup thinly sliced shallots
- 3/4 pound mixed wild mushrooms (such as chanterelles, hedgehogs and creminis), roughly chopped
- Salt and pepper to taste
- 1/4 cup dry sherry or white wine
- 1/2 cup vegetable or low-sodium chicken broth
- 1/2 cup crème fraîche
