Asian Chicken Burger with Spicy Mayo and Pickled Asian Slaw

For the spicy mayo: Mix together the mayonnaise, chili sauce, lime zest and juice and lemongrass in a small bowl
- 1 cup mayonnaise
- 1 to 2 tablespoons chili sauce, such as Sriracha
- Zest and juice of 1 lime
- Kosher salt and freshly ground pepper
- 1 1/2 pounds ground chicken, half dark and half white meat
- 2 tablespoons hoisin sauce
- 1 tablespoon toasted sesame oil
- 1 tablespoon soy sauce
- 4 cloves garlic, minced
- 4 scallions, green and white parts minced
- Kosher salt and freshly ground pepper
- 4 sesame-seed hamburger buns, halved and buttered
- Pickled Asian Slaw, for serving, recipe follows
- 1/4 cup rice wine vinegar
- 2 tablespoons toasted sesame oil
- 2 cloves garlic, minced
- Kosher salt and cracked black pepper
- 2 tablespoons thinly sliced pickled ginger
- 1/4 small head napa cabbage, finely shredded (about 3 cups)
- 1/4 red bell pepper, thinly sliced

Split Pea Soup with Bacon, Ham Hock & Ribs

Sauté bacon in a 6-quart Dutch oven over med-low heat until the fat has rendered and it's cooked, 5-10 mins
- 4 ounces slab bacon, finely diced (reserved for garnish)
- 1 slab of pork spare ribs, cut into individual pieces (16 to 20 ribs)
- 1 small carrot, finely diced
- 1 red onion, finely diced
- 1 celery stalk, finely diced
- 1 tablespoon kosher salt (or more to taste)
- 1 pound split peas (1 1/3 cups)
- 1 garlic clove, minced
- 1 bay leaf
- 1 bunch thyme sprigs (tied with kitchen twine)
- 1 smoked ham hock
- 1 teaspoon cayenne pepper
- 1 teaspoon freshly cracked black pepper

Baked Ziti

Bring a large pot of lightly salted water to a boil
- 1 pound dry ziti pasta
- 1 onion, chopped
- 1 pound Italian sausage ( or ground beef...I like sausage better)
- 2 teaspoons minced garlic
- 2 teaspoons Italian seasonings
- 2 jars (26 ounces each) spaghetti sauce ( I used one Garlic and Onion and one Sausage)
- 6 ounces provolone cheese, sliced ( 9 rounds)
- 1 1/2 cups sour cream
- 8 ounces mozzarella cheese, shredded
- grated Parmesan cheese
Stove Top Mac-n-Cheese

In a large pot of boiling, salted water cook the pasta to al dente and drain
- 1/2 pound elbow macaroni
- 4 tablespoons butter
- 2 eggs
- 6 ounces evaporated milk
- 1/2 teaspoon hot sauce
- 1 teaspoon kosher salt
- Fresh black pepper
- 3/4 teaspoon dry mustard
- 10 ounces sharp cheddar, shredded
