Cookies and Cream Cupcakes

Preheat the oven to 350˚ F
- For the cupcakes:
- 24 Oreo halves, with cream filling attached
- 2 1/4 cups all-purpose flour
- 1 tsp. baking powder
- 1/2 tsp. salt
- 8 tbsp. unsalted butter, at room temperature
- 1 2/3 cup sugar
- 3 large egg whites, at room temperature
- 2 tsp. vanilla extract
- 1 cup milk
- 20 Oreo cookies, coarsely chopped (I quarter them)
- For the frosting:
- 8 oz. cream cheese, at room temperature
- 6 tbsp. unsalted butter, at room temperature
- 1 tbsp. vanilla extract
- 4 cups confectioners' sugar, sifted
- 2 tbsp. heavy cream
- For garnish:
- Oreo cookie crumbs
- 24 Oreo cookie halves
Baked Squash

Wash and cut up squash. Boil until tender, drain thoroughly, then mash
- 3 pounds yellow summer squash
- 1/2 cup chopped onions
- 1/2 cup cracker meal or bread crumbs
- 2 eggs
- 1 stick butter
- 1 tablespoon sugar
- 1 teaspoon salt
- 1/2 teaspoon black pepper (salt and pepper may be increased to taste)
Pea Salad

Amount of Mayonnaise and Mustard used depends entirely on how you like your peas salad consistency
- 2 can peas – drain
- 2 Boiled eggs
- 1/2 chopped onion
- Salt and Pepper to taste
Easy Skillet Pork Chops

In a large skillet heat the oil
- 1 tablespoon vegetable oil
- 4 to 6 pork chops
- 1 cup chopped onion
- 1 teaspoon chopped garlic
- 1 cup barbecue sauce, homemade or bottled
- 1/2 cup water, chicken broth, pineapple, or orange juice
- 1/2 teaspoon salt
- 1/8 teaspoon freshly ground black pepper
Bleu Cheese Pasta

In sauce pan melt butter and bleu cheese, but do not clarify
- 1 tablespoon blue cheese (1/2 triangle of Saga Blue)
- 1 1/2 teaspoon butter
- 1 pint heavy cream
- 1/4 cup parmesan
- 2 slices bacon, cooked and crumbled.
- 1/4 cup corn, shaved off of cob
- pistachio nuts (optional)
- 1 pound linguini or Fettuccine, cooked
Apple Bundt with Brown-Butter Vanilla Bean Glaze

- for the apple bundt:
- 1 T. butter and some flour for preparing the pan
- 4 medium apples - peeled, cored, & shredded (use the big holes on your grater), to make about 3-1/2 cups shredded apples - I used 2 Granny Smith, 1 Gala, and 1 McIntosh
- 1 T. fresh squeezed lemon juice
- 1-1/3 c. white sugar, divided
- 3 c. all-purpose flour
- 1 T. baking powder
- 1 T. cinnamon
- 1/2 tsp. mace
- 1/4 tsp. nutmeg
- 1 tsp. salt
- 1 c. brown sugar
- 1/2 c. vegetable oil
- 1/2 c. applesauce
- 4 large eggs
- 1/2 c. apple cider
- 2 tsp. vanilla
- for the brown-butter vanilla bean glaze:
- 2 to 3 T. half and half
- 2 c. sifted powdered sugar
- vanilla bean seeds scraped from 1/2 a vanilla bean (split bean lengthwise and scrape out seeds)
- 4 oz. butter
- 2 tsp. vanilla
Pumpkin S’more Muffins

Pre-heat oven to 350 degrees and prepare 2 muffin tins by greasing or spraying with cooking spray Break graham cra
- 5 or 6 graham cracker sheets
- 1 15.25 ounce box yellow cake mix
- 1 small can (15 ounces) pumpkin, not pumpkin pie filling
- 1/2 cup water
- 1/3 cup (~3) egg whites
- 1/2 tablespoon pumpkin pie spice
- 3/4 cup mini semi-sweet chocolate chips
- 2 cups mini marshmallows
Maple Bacon Party Mix

Combine the cereals, peanuts, and cayenne in a large, microwavable-safe bowl
- 2 cups corn chex
- 2 cups rice chex
- 2 cups wheat chex
- 1 cup peanuts, salted and roasted
- 6 strips bacon, cooked extra crispy and chopped
- 4 T. butter, melted
- 4 T. maple syrup
- 1/4 – 1/2 teaspoon cayenne (depending on how spicy you like it)
- 1-1 1/2 teaspoons Maldon (any salt will do but if you are using table salt reduce the quantity)
Chicken Stock

Heat the oil in a dutch oven
- 1 tablespoon vegetable oil
- 1 medium onion, diced
- 4 pounds chicken backs and wingtips or whole legs, hacked down into 2-inch pieces
- 2 quarts boiling water
- 2 teaspoons salt
- 2 bay leaves

- 1 pound cucumbers, peeled, seeded and sliced
- 1/2 teaspoon salt
- 1-1/2 cups fat-free plain yogurt
- 1 green onion, coarsely chopped
- 1 garlic clove, minced
- 4-1/2 teaspoons snipped fresh dill
- Additional chopped green onion and snipped fresh dill
