Fresh Herb Jelly

COMBINE herbs, apple juice, water and vinegar in a large stainless steel saucepan
- 2 cups loosely packed coarsely chopped herbs
- 1 1/2 cups unsweetened apple juice or dry white wine
- 1 cup water
- 1 cup white wine vinegar
- 6 Tbsp Ball® RealFruit™ Classic Pectin
- 5 1/4 cups sugar
- 5 (8 oz) half pint glass preserving jars with lids and bands
Bacon Tomato Pasta

Cook the spaghetti in a large pot of boiling water until al dente
- 2 servings spaghetti
- 1 Tbsp. olive oil
- 4 slices applewood smoked bacon, chopped
- 2 cloves garlic, minced
- 1/4 large onion, chopped
- 1/2 tsp red chili pepper flakes (or to taste)
- 1 14.5-oz can diced tomatoes in juice
- Sea salt
- Freshly ground black pepper
- 1/4 cup chopped parsley
- Freshly grated Parmesan
Bacon Chocolate Chip Biscotti

Fry bacon in skillet until browned and crisp, about 5 minutes
- 5 strips bacon
- 2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 3/4 cup granulated sugar
- 1/2 cup (1 stick) unsalted butter, softened
- 2 large eggs
- 1 cup semisweet chocolate chips
Grilled Squash

In a small bowl, combine the oil, garlic, salt and pepper
- 3 tablespoons olive oil
- 2 garlic cloves, minced
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 small butternut squash, peeled and cut lengthwise into 1/2-inch slices
Peach Bread

Preheat oven to 350 Cream together butter and both sugars
- 2 cups white sugar
- 1/4 cup packed brown sugar
- 1 cup room temperature butter
- 2 cups AP flour
- 3 eggs
- 2 1/2 cups peaches peeled and sliced (about 5 peaches)
- 1 tsp salt
- 1/2 tsp cinnamon
- 1 tsp baking soda
- Peach Glaze Icing
- 1 cup confectioners sugar
- 1 tbsp peach simple syrup (can use as much as needed to reach desired texture)
- Mix together until you reach a smooth pouring consistency.
- Peach Simple Syrup
- 1 cup sugar
- 1 cup water
- 1 peach peeled and sliced
- Bring ingredients to a boil then remove from heat and let cool.
Coffee Creme Caramel

Bring 2 cups whipping cream and 1 ½ cups ½ and ½ to a boil in a medium saucepan
- 2 cups whipping cream
- 1 1/2 cup 1/2 and 1/2
- 1 1/2 cup whole coffee beans (4 oz)
- 1 1/3 cup sugar
- 1/3 cup water
- 3 eggs
- 5 egg yolks
- 3/4 cup sugar
- 2 tablespoon vanilla
- 1/8 teaspoon salt
Mozzarella Tomatoes

Place single layer of tomatoes in a greased 9x13 pan
- 4 medium tomatoes, sliced
- 8 cups soft bread crumbs
- 3 cups (12 ounces) shredded mozzarella cheese, divided
- 4 bacon strips, cooked and crumbled
- 1/2 cup butter, melted
- 1/2 cup celery, chopped
- 1/2 cup onion, chopped
- 2 eggs, beaten
- 1/2 teaspoon oregano
- 1/2 teaspoon garlic salt
Cantaloupe Pie

Preheat oven to 400° F. In a bowl, combine the ingredients and set aside for 10 minutes
- Filling:
- 2 to 3 cups sliced cantaloupe
- 1/2 tablespoon fresh lemon juice
- 1/2 cup granulated sugar
- 1 tablespoon flour
- 2 tablespoons melted butter
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/2 teaspoon vanilla
