Ingredients

  • 3 pounds yellow summer squash
  • 1/2 cup chopped onions
  • 1/2 cup cracker meal or bread crumbs
  • 2 eggs
  • 1 stick butter
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper (salt and pepper may be increased to taste)

Step 1

Wash and cut up squash. Boil until tender, drain thoroughly, then mash. Add all ingredients except ½ of butter to squash. Melt remaining butter. Pour mixture in baking dish, then spread meted butter over top and sprinkle with cracker meal or bread crumbs.
Bake in 375 oven for approximately one hour or until brown on top.
