Grape Gazpacho

Place half of the cucumbers, apples, and tomatillos into the bowl of a food processor
- 1 small cucumber, seeded and chopped (approximately 1 cup)
- 1 Granny Smith apple, peeled, cored, and chopped (approximately 1 cup)
- 1 cup chopped tomatillos (approximately 3 medium tomatillos)
- 1 pound seedless green grapes (approximately 3 cups)
- 1 cup chopped walnuts, toasted
- 1 cup plain yogurt
- 1 cup white grape juice
- 1 teaspoon rice wine vinegar
- 6 large mint leaves
- Kosher salt
Coconut Chicken Curry Soup

Heat the olive oil in a medium sized soup pot over medium-high heat
- olive oil
- 1/2 of a medium yellow onion, sliced thin
- 2 1/2 cups chicken broth
- 14 ounces unsweetened coconut milk
- 1 1/2 teaspoon curry powder
- 1 jalapeno, seeded, minced
- 3 chicken breasts, cut into bite sized chunks
- 2 tablespoons lime juice
- 1 small red bell pepper, sliced thin
- 1/2 cup chopped green onion
- 1/2 cup chopped fresh cilantro, plus extra for garnish
- 1/2 cup shredded coconut
- 2 cups freshly cooked jasmine rice
Apricot Soufflés

In a heavy saucepan simmer apricots, water and ½ cup sugar, covered for 20 minutes
- 6 ounces dried apricots (about 1 1/2 cups)
- 1 1/2 cups water
- 3/4 cup sugar, plus additional for coating ramekins
- 1 tablespoon fresh lemon juice
- 1 tablespoon dark rum, if desired
- 1/2 teaspoon vanilla
- 5 large egg whites
- 1/4 teaspoon cream of tartar

Carrot Cake Oatmeal

Combine in a saucepan: 1/2 cup rolled oats 1/2 cup skim milk (or other milky substance) 1/2 cup water 50 grams o...
- Toppings:
- 1/2 cup rolled oats
- 1/2 cup skim milk (or other milky substance)
- 1/2 cup water
- 50 grams of shredded carrot (about half of a SMALL carrot – maybe 1/4 a cup?)
- Half a mango, diced (could also use pineapple, as Liz suggested)
- Pinch of salt
- 1 tsp vanilla extract
- 1 tsp brown sugar (optional)
- While oats are cooking:
- Make “icing” by blending 1 oz (about 2 tbsp) of non-fat plain greek yogurt with 1 tsp maple syrup.
- Toast about 1 tbsp chopped pecans in the microwave.
Tres Leches Oatmeal

Combine the 3 milks (tres leches): evaporated milk, sweetened condensed milk, and half and half
- 1 packet Quaker Oatmeal, original flavor
- 1 tablespoon whole flax seed
- 1 teaspoon butter
- boiling water
- 3 tablespoons evaporated milk
- 3 tablespoons sweetened condensed milk
- 2 tablespoons half and half
- 1/4 teaspoon vanilla
- 1/8 teaspoon rum flavoring
- 1/2 teaspoon cinnamon
- honey, optional
Oatmeal Cookies

preheat oven to 350 cream margarine and both sugars until light and fluffy
- 1 stick softened margarine (margarine actually makes it taste richer…odd..)
- 1/2 cup sugar
- 1/2 cup packed brown sugar
- 1 egg
- 2 tsp vanilla
- 1 cup self-rising flour
- 1 cup old fashioned oatmeal
- 1/2 cup coconut
- you can then add either 1 cup raisins or 1 cup craisins or 1 cup chocolate chips or 1 cup chopped pecans or a combination of these
Blueberry Citrus Conserve

- 4 cups sugar
- 2 cups water
- 1 small lemon (unpeeled), seeded and thinly sliced
- 1/2 cup orange (unpeeled), seeded and thinly sliced

- 4 (8 oz) half pint glass preserving jars with lids and bands
