Frosted Banana Bars

I can't remember if I have made these or not
- For the Banana Bars:
- 1/2 cup butter or margarine, softened
- 1 1/2 cups sugar
- 2 eggs
- 1 cup (8 ounces) sour cream
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 2 medium ripe bananas, mashed (about 1 cup)
- For the Frosting:
- 1 package (8 ounces) cream cheese, softened
- 1/2 cup butter or margarine, softened
- 2 teaspoons vanilla extract
- 3 3/4 to 4 cups confectioners' sugar
Chicken Tortilla Bake

The perfect recipe to try when you're tired of your usual weekday dinners
- 2 (10 3/4-ounce) cans of cream of chicken
- 1 (10-ounce) can of dice tomatoes and green chilies
- 12 (6-inch) corn tortillas
- 3 cups of cooked chicken
- 1 cup shredded Mexican cheese blend
Baked Ravioli Casserole

Similar to lasagna, but much easier! Takes less than 20 minutes to assemble and only 30 minutes to bake!
- 1 pound ground beef OR ground turkey OR Italian sausage
- 1 bag frozen cheese ravioli, thawed
- 2 cups mozzarella cheese, shredded
- 1 jar (28-ounce) spaghetti sauce
Leftover Parmesan Mashed Potato Patties

This works best with cold mashed potatoes
- 2 2/3 cups cold leftover skinny garlic mashed potatoes (find recipe in log)
- 2 large egg whites or 1/4 cup egg beaters
- 1/3 cup parmesan cheese, grated
- 1/3 cup Italian seasoned breadcrumbs
- cooking spray (They used Smart Balance)
Melt in Your Mouth Chicken Breasts

- 4 boneless chicken breast halves
- 1 cup mayonnaise or greek yogurt
- 1/2 cup freshly grated parmesan cheese
- 1 1/2 teaspoons seasoning salt
- 1/2 teaspoon ground black pepper
- 1 teaspoon garlic powder
Sassy Grilled Chicken

- 1/2 cup Ranch dressing
- 2 TB French or Catalina dressing
- 6 Chicken breasts - boneless skinless
- (about 1.5 lbs)
Vegetable Hobo Soup (LF)

- 3 LBS frozen mixed vegetables
- 1 46-ounce can V-8 Vegetable juice
- 2 bay leaves

- 6 oz fat free plain yogurt
- 4 tsp reduced sugar grape jelly

Slow Cooker Brown Sugar Pork Loin

VERY GOOD! A little too sweet for me but added more mustard and vinegar
- 1 boneless pork loin roast, 4 to 6 pounds
- 1 clove garlic, halved
- salt and pepper
- 1 1/3 cups brown sugar, divided
- 1 tablespoon Dijon mustard
- 1 tablespoon balsamic vinegar
- 1/4 teaspoon cinnamon
Coconut Pineapple Clusters

Preheat oven to 350ºF. Prepare rice according to package directions
- 1 1/2 cups Minute® White Rice, uncooked
- 1 pkg (14 oz.) flaked sweetened coconut
- 1 can (14 oz.) sweetened condensed milk
- 1 can(8 oz.) crushed pineapple, well drained
- 1/3 cup all purpose flour
- 1 Tbsp lemon juice
- 1 tsp grated lemon peel
- 1 tsp vanilla extract
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup semi-sweet chocolate chips
- non-stick cooking spray
