  • 1/2 cup Mexican blend shredded cheese
  • 3/4 cup cooked chicken (diced or shredded)
  • 1/3 cup enchilada or taco sauce
  • 2 teaspoons enchilada or taco seasoning mix
  • 1/4 cup Mexican shredded cheese for sprinkling

  • 2 16 ounce boxes frozen Perogies (Mrs T's, 24 pieces) boiled in lightly salted water for 7 minutes

  • FOR THE STREUSEL TOPPING:
  • 2 cups all-purpose flour
  • 1 1/2 cups white whole wheat flour (or all-purpose flour)
  • 2 cups light brown sugar, packed
  • 1/3 cups granulated sugar
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon freshly grated nutmeg
  • 1 teaspoon cinnamon
  • 1 teaspoon allspice
  • 1/2 teaspoon cloves
  • 1 15-ounce can pumpkin puree, or just under two cups
  • 1 cup vegetable oil
  • 1/3 cup honey
  • 1/3 cup water
  • 1/2 cup of chopped walnuts
  • 1/2 cup flour
  • 1/2 cup granulated sugar
  • 1/2 teaspoon salt
  • 2 tablespoons cinnamon
  • 2 tablespoons butter, I doubled the butter to make it extra-good
