Duck Fat-Fried Chicken with Spicy Slaw

- For the Spicy Napa Cabbage Slaw:
- 8 leaves Napa Cabbage, stemmed, thinly sliced
- 1 medium carrot, peeled and julienned
- 2 scallions, trimmed and thinly sliced on a diagonal
- 1/2 medium red onion, thinly sliced
- 2 teaspoons doubanjiang (hot chile paste)
- 1 tablespoon rice vinegar
- 1/2 teaspoon soy sauce
- 1/2 teaspoon fish sauce
- Salt, to taste
- For the Duck Fat-Fried Chicken:
- 2 cloves garlic, minced
- 1 teaspoon grated ginger
- 1/4 cup soy sauce
- 1/4 cup mirin
- 2 teaspoons toasted sesame oil
- Pinch of freshly ground black pepper
- 4 skin-on, bone-in whole chicken legs (legs and thighs attached)
- 6 cups duck fat
- 1 cup potato starch
- Salt, to taste
- 2 limes, cut into wedges

- For the dough:
- 3 cups (12 ounces) unbleached all purpose flour
- 1/2 teaspoon fine salt
- 2 large eggs
- 1/3 cup olive oil
- 1 tablespoon apple cider vinegar
- 1-3 tablespoons water
- For the filling:
- 1/2 pound dried penne or ziti pasta
- 1/2 cup (3 1/2 ounces) granulated sugar
- 1 1/2 cups (4 1/2 ounces) almond meal
- 1/3 cup (1 1/3 ounces) bread crumbs
- 1/4 teaspoon ground cinnamon
- 5 large eggs
- Zest of half lemon
- 1/2 teaspoon almond extract
- 1/2 cup (1 stick) unsalted butter, chilled and cut into 1/2-inch cubes
- For the garnish:
- 2 tablespoons confectioners' sugar

- 3 ounces gin (make it a good one)
- Juice of 1/2 lemon or lime
- 1 1/2 teaspoons confectioners' sugar (it’ll dissolve more quickly than granulated or superfine sugar)
- Soda water (or, if you have a sweet tooth, lemon-lime flavored soda or seltzer)
- A slice or twist of lemon or lime
