Very rich - a small piece suffices
- Cake
- Unsweetened cocoa powder
- 1 1/2 cups diced pitted prunes (about 8 ounces)
- 1 cup prune juice
- 1 cup (2 sticks) unsalted margarine
- 8 ounces bittersweet (not unsweetened) or semisweet chocolate, chopped
- 3/4 cup unsweetened cocoa powder
- 1 cup coarsely chopped toasted walnuts (about 4 ounces)
- 8 large eggs, room temperature
- 2 large egg yolks
- 1 3/4 cups sugar
- Pinch of salt
- Glaze
- 1 cup prune juice
- 1/4 cup (1/2 stick) unsalted margarine
- 10 ounces bittersweet (not unsweetened) or semisweet chocolate, chopped
- 24 walnut halves

Preheat oven to 250°. Combine the first 5 ingredients in a large bowl
- 4 cups Bugles (original flavor)
- 3 cups whole wheat sesame pretzel rounds or other small pretzels
- 2 cups roasted unsalted peanuts

- 1 cup store-bought roasted green peas (not wasabi flavor)
- 6 tablespoons (3/4 stick) unsalted butter

- 1/2 teaspoon English mustard powder
- 1/2 teaspoon kosher salt

- 2 small scallions, trimmed and minced
- One 1-inch piece ginger, peeled and minced

- 17.64 oz. (3-1⁄2 cups) unbleached bread flour
- 3-1 ⁄4 tsp. sugar
- 1-1 ⁄2 tsp. fine sea salt or kosher salt
- 1-3 ⁄4 tsp. instant yeast
- 1-1 ⁄2 cups room temperature buttermilk (70°F to 78°F)
- Cornmeal, for dusting
- 1 oz. (2 Tbs.) unsalted butter
Buttermilk Cake with Spiced Vanilla Icing

This cake can be made a day or two in advance
- For the cake:
- 4 oz. (1/2 cup) unsalted butter, softened; more for the pan
- 13-1/2 oz. (3 cups) unbleached all-purpose flour; more for the pan
- 1-1/2 cups granulated sugar
- 1/2 cup canola oil
- 2 large eggs
- 1 Tbs. distilled white vinegar
- 2 tsp. pure vanilla extract
- 1 tsp. baking soda
- 1 tsp. table salt
- 1/2 tsp. ground ginger
- 1/4 tsp. freshly grated nutmeg
- 3/4 cup buttermilk
- 2-1/4 cups peeled and grated butternut squash (about 8 oz.)
- For the icing and garnish:
- 9 oz. (2-1/4 cups) confectioners’ sugar
- 3 Tbs. buttermilk; more as needed
- 1 tsp. pure vanilla extract
- 1/4 tsp. freshly grated nutmeg
- 1/4 tsp. table salt
- 1/4 cup finely chopped crystallized ginger

Heat oven to 350. In large bowl, combine all ingredients except bacon
- 2 lbs. ground beef
- 1 cup seasoned Italian bread crumbs
- 1/2 cup finely chopped onion
- 1/3 cup ketchup
- 1/3 cup water
- 1 teaspoon garlic powder
- 2 eggs
- Pepper to taste
- Salt, if desired 4 strips bacon, if desired
- Heat oven to 350. In large bowl, combine all ingredients except bacon. Shape into a loaf; place in 9-by-5-inch pan. Arrange bacon strips on top of meat mixture, if desired.Bake for 60 minutes. Serves 6 to 8.
