Lamb Larb (Laotian)

Lamb Larb Larb is hailed as the national dish of Laos
- 1 lemongrass stalk
- 4 garlic cloves
- 1/2 bunch cilantro, stems and leaves separated, stems coarsely chopped plus sprigs for serving
- 1 large shallot, coarsely chopped
- 4 red Thai chiles, divided
- 1/2 cup salted, roasted peanuts
- 3 tablespoons fresh lime juice
- 1 tablespoon (or more) fish sauce
- 1 1/2 teaspoons demerara sugar or dark brown sugar
- 2 tablespoons vegetable oil
- 1 pound ground lamb (at least 10% fat)
- Cooked white rice, Bibb lettuce leaves, sliced cucumber, lime wedges, and mint sprigs (for serving)
Ice Cream Cake

1. Make the cake: Place the outside ring of a springform pan on a baking sheet lined with waxed paper

- One 12-ounce box chocolate wafer cookies
- 1 cup hot fudge sauce, divided
- 2 pints vanilla ice cream
- 2 pints caramel ice cream
- Whipped-Cream Frosting
- 1 teaspoon gelatin
- 1/4 cup water
- 1 cup heavy cream
- 1/3 cup sugar
- 1/2 teaspoon pure vanilla extract
- Melted chocolate, sprinkles, caramel candies, cookies or other sweets for decorating (optional)
Crispy Apple Chips with Sage and Maple Vanilla Yogurt Dip

Peel apples and remove stems
- 2 medium to large crisp apples (such as Granny Smith or Crispin)
- Grapeseed oil (for frying)
- 1/3 cup fresh sage leaves
- 4 ounces low-fat plain Greek-style yogurt
- 1 tablespoon pure maple syrup

Cheesy Slice & Bake Crackers

Grate 6 oz. cheddar on the medium holes of a box grater, letting shreds fall into a medium bowl
- 6 ounces extra-sharp white cheddar cheese
- Small handful of chives (about 15)
- 1 1/4 cups all-purpose flour
- 1 1/2 teaspoons kosher salt
- 1/2 teaspoon sugar
- Pinch of cayenne pepper
- 6 ounces chilled cream cheese
- 3 tablespoons poppy seeds
Spicy Barbecued Tofu Kebabs

1. To a spice grinder add the mustard seeds, cumin seeds, red pepper flakes, coriander seeds and peppercorns
- Barbecue sauce
- 1/2 teaspoon brown mustard seeds
- 1/2 teaspoon cumin seeds
- 1/2 teaspoon dried red pepper flakes
- 1/4 teaspoon coriander seeds
- 1/4 teaspoon black peppercorns
- 1 tablespoon grapeseed oil
- 2 garlic cloves, very finely chopped
- 1-inch piece of ginger, peeled (use the edge of a teaspoon to scrape off the skin) and grated
- 1/2 medium shallot, very finely chopped
- 1/4 cup no-salt-added tomato paste
- 1/2 cup water
- 1 tablespoon honey
- 2 teaspoons kosher salt

- 1 package extra-firm tofu, drained

Deep Fried Eggs w/Sriracha Remoulade

- 1/2 cup mayonnaise
- 2 1/2 tablespoons Sherry wine vinegar
- 1 1/2 tablespoons sriracha sauce*
- 1 tablespoon whole grain Dijon mustard
- 1 tablespoon chopped cornichons** or pickles
- 1 1/2 teaspoons chopped fresh tarragon
- 1 1/2 teaspoons chopped fresh parsley
- 1 1/2 teaspoons chopped fresh chives
- 1 1/2 teaspoons chopped drained capers
- 1/2 teaspoon freshly ground black pepper
- 3 large hard-boiled eggs, chopped

- 1/4 cup buttermilk

Here we take this concept and use fresh coconut water from the young coconut to make a coconut water gelatin
- Coconut Water Layer
- 1 c coconut water (fresh young coconut prefered)
- 1 ts agar agar
- Coconut Milk Layer
- 1 c coconut milk
- 1.5 ts agar agar
- 1.5 ts sugar
- Pinch of koshar salt
- Coconut Cream Layer
- 1/2 c Half and Half (or whole milk if you prefer less creamy)
- 1/2 c coconut milk
- 1/4 c sugar
- 1/8 c cornstarch
- 1/8 ts kosher salt
- 1/2 ts vanilla extract
- 1 egg
- 1 c toasted shredded coconut
- Coconut Almond Brittle
- 1 c sugar (dark or white)
- 1/2 c light corn syrup
- 1/4 ts salt
- 1/4 c water
- 1 tbs butter, softened
- 1 ts baking soda
- 1 c toasted shredded coconut
- 1/2 c toasted sliced almonds

Spiced Feta in Olive Oil

1. Mix the olive oil with the lemon juice, thyme and chili flakes
- 3/4 olive oil
- juice of 2 lemons
- leaves from 2 sprigs of thyme
- 1/2 tsp. dried red chili flakes
- 1/2 tsp. fennel seeds
- 1/2 tsp. black peppercorns
- 1/2 tsp. white peppercorns
- 9 oz. feta, broken into chunks
Yolanda's Dark Chocolate Ganache

Ganache is one of my favorite ways to incorporate chocolate into a cake
- 1 lb good quality dark chocolate
- 2 cups whipping whipping cream
Cuban/Mexican Grilled Corn

There are many methods of grilling corn and you may already have favorite technique
- Corn on the cob
- Grated cotija cheese (can be found easily here in Southern California. If you can’t find it, substitute with grated Queso Fresco or Italian parmesan or Greek feta)
- Mayonnaise
- Ground Cayenne chili powder
- Lime wedges
- (Can substitute the butter below for the mayonnaise)
- Garlic/Jalapeno Butter
- 1 stick of unsalted butter
- 2 of cloves peeled garlic
- 1 jalapeno deseeded
- Let butter sit out of the fridge about an 1 hr. to soften. Put ingredients in food processor and mix garlic until finely minced and well distributed.
