Ann Romney's Sweet Potato Muffins

For the Muffins: Preheat oven to 375 degrees F
- 1/2 cup butter, softened
- 1 cup sugar
- 2 eggs
- 11/3 cups cooked, mashed sweet potatoes
- 11/2 cups flour
- 4 teaspoons baking powder
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 1 cup milk
- 1 cup sugared walnuts (see below)
- 1/2 cup brown sugar (optional)

- 1/3 cup flour

- 1 red onion, diced

- 3 egg yolks
- 2 Tbsp lemon juice
- 1/4 tsp kosher salt
- 1 tsp Dijon mustard
- Pinch of cayenne pepper

Salad: Heat the olive oil over medium-high heat in a large skillet
- Salad:
- 2 Tbsp olive oil
- 1 medium red onion, roughly chopped
- 1 fennel bulb, roughly chopped 1 lb butternut squash, cubed into 1/2'' pieces and cooked until fork-tender
- 3/4 tsp salt
- 1/2 tsp ground black pepper
- 1 (5-oz) package baby arugula
- 1/2 pomegranate (seeds left whole)
- 1 (3-oz) bag pork cracklings, broken into small pieces
- Dressing:
- 1/8 cup extra virgin olive oil
- 1/4 cup vegetable oil
- 4 tbsp red wine vinegar
- 1 tbsp honey
- 1/2 tsp ground black pepper
- 1/4 tsp salt
- 1/2 pomegranate (juice & seeds)

- 8 oz cooked ham, finely chopped
