Cheesy Scalloped Potatoes with Ham

Preheat the oven to 350°F
- 1 cup half-and-half
- 1/2 cup heavy cream
- 3 lbs Idaho potatoes, washed, peeled, thinly and evenly sliced
- 10-oz pre-cooked ham, diced
- 1 medium onion, thinly sliced
- 3 cups Monterey Jack cheese, shredded
- 3 cups cheddar cheese, shredded
- 1/2 tsp dried thyme
- 1/2 tsp kosher salt
- 1/4 tsp ground black pepper
Big Daddy’s Brine

Ice to cool the brine down Let your Turkey meat marinate in the brine over night
- 1 1/2 cups of Kosher salt
- 1 cup of brown sugar
- 1/2 cup Worchestire Sauce
- 1/2 cup soy sauce
- 2 heaping of coarse ground black pepper
- A gallon of boiling water to mix the ingredients
