Baked Fried Chicken

Preheat oven to 400 degrees
- Mix in a Gallon Size Ziploc or Large Bowl:
- Place thawed chicken breast tenderloin strips in a bowl of milk. Let soak for 20-30 min.
- 1/2 tsp. Salt
- 1 T Season All
- 3/4 tsp Pepper
- 1 c. Flour
- 2 tsp. Paprika

- 1 cup butter
- 1 cup sugar
- 1/2 cup brown sugar
- 2 eggs
- 2 teaspoons vanilla
- 2 1/4 cup flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 12 ounce bag semi-sweet chocolate chips
Chicken Pot Pie

Preheat oven to 425 degrees
- 1/3 cup butter
- 1/2 cup Bisquick
- 1/2 cup chopped onion
- 1/4 tsp pepper
- 1/8 tsp oregano
- 2/3 cup milk
- 1 1/2 cups chicken broth
- 2 cups cooked chicken (or more)*
- 16 oz. frozen peas & carrots (or veggies of choice)
- 2 pie crusts; folded, ready made

Mix salt, pepper, garlic powder, onion powder, and paprika in a small bowl (I use my old 1/4 cup)
- 2-4 boneless chicken breasts with or without rib meat
- 1/2 t. salt
- 1/2 t. pepper
- 1/2 t. garlic powder
- 1/2 t. onion powder
- 1/2 t. paprika
- 2-3 T. olive oil

- Ingredients:
- 3 lb of Mixed Chicken Drumsticks and Thighs
- 2 tsp of Dried Paprika
- 2 Tbsp of Fresh Rosemary, leaves stripped from the stem and roughly chopped
- 2 tsp of Granulated Garlic
- 2 tsp of Granulated Onion
- 1-1/2 tsp of Dried Thyme
- 2 tsp of Dried Sage
- 1 Tbsp of Dijon Mustard
- 1/3 cup of Olive Oil
- 3 Tbsp of Lemon Juice
- 12 About 12 cloves of Garlic, unpeeled
- 1-1/2 lbs of Baby Potatoes, halved
- Additional Olive Oil and a bit more Rosemary
- 1/4 cup of fresh chopped parsley

In a medium bowl, whisk together oil, vinegar, garlic and oregano
- 1/2 c. extra-virgin olive oil
- 1/4 c. red wine vinegar
- 1 clove garlic, minced
- 1 tsp. oregano
- kosher salt
- Freshly ground black pepper
- 1 lb. fusilli, cooked
- 1 pt. grape tomatoes, halved
- 8 oz. ciligini, halved
- 2/3 c. salami, chopped
- 2/3 c. ham, chopped
- 1/2 c. black olives, sliced
- 1/2 red onion
- 1/2 c. Pepperoncini, roughly chopped
- 1 tbsp. fresh basil, sliced

"This recipe was given to me by my mother many years ago
- 4 large skinless, boneless chicken breast halves
- 1 cup milk, or as needed
- 1 cup bread crumbs
- 1 cup grated Pecorino Romano cheese
- 2 tablespoons chopped fresh parsley
- 1 cup olive oil
- salt and ground black pepper to taste
- 1 lemon, thinly sliced
- 1 cup white wine
- 1 cup chicken broth
- 1/4 cup lemon juice
- 1 ounce brandy-based orange liqueur (such as Grand Marnier®), or to taste
Strawberry Avocado Spinach Salad with Poppy Seed Dressing

Toss all ingredients with Poppy Seed Dressing or your favorite dressing
- Salad:
- 6 cups baby spinach
- 1 pint of strawberries, hulled and halved
- 1 or 2 avocados, diced
- 1/2 red onion, thinly sliced
- 4 ounces crumbled blue cheese
- 1/4 cup slices almonds, toasted
- Dressing:
- 1/2 cup olive oil (or avocado oil)
- 3 tablespoons apple cider vinegar
- 2 tablespoons honey
- 1 tablespoon poppy seeds
- Pinch of dry mustard (optional)
- salt & pepper
