Ingredients

  • C flour

  • tsp baking powder

  • ¼

    tsp baking soda

  • ¼

    tsp salt

  • 1

    C unsalted butter, room temp.

  • C sugar

  • 4

    eggs

  • 2

    TBS fresh lemon juice

  • 1

    TBS lemon zest

  • tsp vanilla extract

  • 1

    C buttermilk

  • ½

    C sour cream

  • C blueberries tossed in 1 TBS flour

  • ½

    C blueberries for garnishing

  • GLAZE

  • C confectioners sugar

  • 4

    tsp fresh lemon juice

  • 3

    tsp limoncello (or subst. lemon juice)

  • 1

    tbs maple syrup

Directions

Preheat oven to 350 Greased and flour 12" bundt pan Beat butter, sugar, lemon zest, lemon juice and vanilla until fluffy. Beat in sour cream. Sift flour, baking soda and baking powder. Alternately add buttermilk and flour mixture, mixing just until blended. Pour 1/3 of batter into pan, THEN fold in blueberries and pour remainder of batter into pan. Cool before glazing, just before serving.
