Spicy Chicken Rigatoni

In a sauté pan, heat oil over medium heat
- 1/4 cup oil
- 1/2 Tbs crushed red pepper
- 1/8 tsp salt
- 1/8 tsp ground black pepper
- 1 Tbs chopped garlic
- 6 oz chicken, sliced
- 3/4 cup. Marinara sauce
- 1/2 cup Alfredo sauce
- 2 tsp butter
- 1/2 cup pitted and chopped kalamata olives
- 1/2 red or yellow bell pepper, cored, seeded, and cut into thin strips
- 1/2 medium yellow onion, cut into thin rings
- 2 cups sliced mushrooms
- 1 lb Rigatoni pasta, cooked according to package directions
- additional 1/2 t crushed red pepper (for garnish)
Carolina Honey BBQ Sauce

Combine all ingredients in a saucepan over medium/high heat
- 1 cup ketchup
- 1 cup white vinegar
- 1/2 cup molasses
- 1/2 cup honey
- 1 teaspoon liquid smoke
- 1/2 teaspoon salt
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 teaspoon Tabasco sauce
Swedish Meatballs

Preheat oven to 275 degrees
- 8 ounces each ground sirloin and ground pork
- 1 (about 1/2 cup) small onion, coarsely chopped in a food processor
- 1/2 cup sour cream
- 1 large egg, lightly beaten
- 3 tablespoons fine dry breadcrumbs
- 1 1/2 teaspoons coarse salt
- Freshly ground pepper
- 1/2 teaspoon ground allspice
- 1/4 teaspoon ground nutmeg
- 1 tablespoon vegetable oil
- 2 tablespoons dry red wine
- 2 tablespoons all-purpose flour
- 2 cups homemade or low-sodium store-bought beef stock
- 1/4 cup coarsely chopped fresh flat-leaf parsley
Pork Roast (Pernil al Horno)

In a small bowl mix together the garlic, salt, pepper, oregano, garlic and olive oil
- 7 lbs. pork shoulder - picnic cut (with fat)
- 9 garlic cloves (You may use powder garlic or ground garlic sold in glass jars - 1 tsp. equals one clove.)
- 1/2 teaspoon black pepper
- 1/2 teaspoon crushed oregano
- 1 1/2 tablespoons olive oil
- 1 1/2 teaspoon salt
- Note: Season the meat one day ahead and refrigerate (if you are short on time just season and cook).
The Olive Garden® Chocolate Lasagna

1. Cake: Heat oven to 350 F
- 6 cups cake flour
- 5 1/4 cups sugar
- 2 1/4 cups Hershey.'s Cocoa
- 2 tablespoons baking soda
- 4 1/2 cups milk
- 1 1/2 cup butter
- 12 large eggs
- 1 tablespoon vanilla extract

- 1 1/2 cup butter, softened (3 sticks)

Triple Tomato Soup

1. In 4-quart Dutch oven cook onion in hot butter, covered, over medium-low heat for 10 minutes or until tender
- 1 large onion, sliced
- 1 Tbsp. butter or olive oil
- 1 28-oz. can whole tomatoes
- 3/4 cup dried tomatoes (not oil packed)
- 1/2 of 6-ounce can no-salt-added tomato paste
- 1 14-oz. can reduced-sodium chicken broth or vegetable broth
- 1/2 cup sliced celery (1 stalk)
- 2 Tbsp. snipped fresh parsley or cilantro
- 2 to 3 tsp. lime juice or lemon juice
- Dairy sour cream
- Fresh Italian (flat-leaf) parsley
Sweet Potatoes-Stuffed Twice-Baked

1. Pierce potatoes all over with a fork and place in a shallow microwave-safe baking dish
- 4 sweet potatoes (8 to 10 oz. each)
- 4 strips bacon
- 3/4 cup sour cream
- 1/4 cup sun-dried tomatoes packed in oil, drained, patted dry and finely chopped
- 2 scallions, white and light green parts, chopped
- 1/2 teaspoon salt
- 6 ounces shredded Cheddar
