- 1/2 cup heavy cream
Cajun Shrimp Casserole

Peel shrimp; devein, if desired
- 2 pounds unpeeled, large fresh shrimp
- 1/4 cup butter
- 1 small red onion, chopped
- 1/2 cup chopped red bell pepper
- 1/2 cup chopped yellow bell pepper
- 1/2 cup chopped green bell pepper
- 4 garlic cloves, minced
- 2 cups fresh or frozen sliced okra
- 1 tablespoon lemon juice
- 1 1/2 teaspoons salt
- 1 (10 3/4-ounce) can cream of shrimp soup
- 1/2 cup dry white wine
- 1 tablespoon soy sauce
- 1/2 teaspoon cayenne pepper
- 3 cups cooked long-grain rice
- 1/4 cup grated Parmesan cheese
- Garnishes: quartered lemon slices, fresh flat-leaf parsley sprigs
- 1 (10 3/4-ounce) can cream of mushroom soup may be substituted for cream of shrimp soup.
Zuppa Toscana Soup

over medium-high heat, brown sausage, breaking into small pieces as you fry it; drain, set aside
- 1 lb. spicy Italian sausage - crumbled
- 1/2 lb. smoked bacon - chopped
- 1 qt. water
- (2) 14.5 oz. cans (about 3 2/3 cups) chicken broth
- 2 lg. russet potatoes - scrubbed clean, cubed
- 2 garlic cloves - peeled, crushed
- 1 med. onion - peeled, chopped
- 2 cups chopped kale OR Swiss chard
- 1 cup heavy whipping cream
- salt and pepper - to taste

- 1 cup milk
- 6 tablespoons unsalted butter
- 3/4 teaspoon coarse salt
- 1 1/2 cups plus 1 tablespoon all-purpose flour
- 1/2 teaspoon espelette pepper, plus more for garnish
- 4 large eggs
- 1 3/4 cups plus 2 tablespoons grated Gruyere cheese

Bake sweet potatoes at 350 for 45-60 minutes, or until fork tender
- 2 medium or large sweet potatoes
- 1 1/2 tablespoons butter
- 1 shallot, minced
- 1 bag fresh baby spinach
