Roast Chicken with Pomegranate Glaze

1. Preheat oven to 425°F
- 1 tablespoon ground sumac (see Tips)
- 1 tablespoon kosher salt
- 1 4-pound chicken
- 6 cups sliced cored fennel (2-3 large bulbs)
- 1 large yellow onion, chopped
- 2 teaspoons extra-virgin olive oil
- 1/2 cup pomegranate molasses (see Note)
- 2 tablespoons honey
- 1 teaspoon freshly ground pepper
- Pomegranate seeds for garnish (see Tips)
Caramelized Baked Chicken

Preheat oven to 375 degrees F (190 degrees C)
- 3 pounds chicken wings
- 2 tablespoons olive oil
- 1/2 cup soy sauce
- 2 tablespoons ketchup
- 1 cup honey
- 1 clove garlic, minced
- salt and pepper to taste
Enchiladas Casserole

- 2 lbs. Hamburger meat, browned with some salt, pepper, and garlic
- 1 lb. cheddar (or your favorite)cheese, grated
- 1 can cream of mushroom soup
- 1 can cream of chicken soup

- 1 can enchilada sauce
- 1-2 chopped onions

Creamy Potato and Asparagus Soup

Reserve about 1/3 of the asparagus
- 1 large bunch asparagus, trimmed
- 1 1/2 lb. potatoes, peeled and chopped (1/2-inch pieces or smaller)
- 1 12-oz can evaporated milk
- 6 slices turkey bacon
- 1 tablespoon, honey
- salt, freshly ground pepper, paprika (optional)
Slow Cooker Cheesy Potato Soup

In 3- to 4-quart slow cooker, mix potatoes, onion, celery, broth and water
- 1 bag (32 oz) frozen southern-style diced hash brown potatoes, thawed
- 1/2 cup frozen chopped onion (from 12-oz bag), thawed
- 1 medium stalk celery, diced (1/2 cup)
- 1 carton (32-oz) Progresso® chicken broth
- 1 cup water
- 3 tablespoons all-purpose flour
- 1 cup milk
- 1 bag (8 oz) shredded American-Cheddar cheese blend (2 cups)
- 1/4 cup real bacon pieces (from 2.8-oz package)
- 4 medium green onions, sliced (1/4 cup).
Amarillo Cheese Fries and dipping sauce

Combine ranch dressing and taco seasoning; set aside
- 1 bottle (8 oz. size) ranch salad dressing
- 1/2 envelope (1.25 oz. size) taco seasoning
- 1 package (32 oz. size) frozen spicy French fries -- prepared as directed
- 4 strips cooked bacon -- crumbled
- 1/2 cup shredded colby jack cheese
Chicken Bruschetta Casserole

Preheat Oven to 400. In a casserole dish (I used smaller than 9x13) put all the diced chicken down
- 1 can (14-1/2 oz.) diced tomatoes, undrained
- 1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken
- 1/2 cup water
- 2 cloves garlic, minced
- 1-1/2 lb. boneless skinless chicken breasts, cut into bite-size pieces
- 1 tsp. dried basil leaves
- 1 cup KRAFT 2% Milk Shredded Mozzarella Cheese
Chicken Cheese Tortila Soup

Saute garlic and onions in oil in a large pan or Dutch oven until soft
- 1 medium yellow onion, chopped
- 2 teaspoons fresh garlic, minced
- 2 teaspoons vegetable oil
- 4 cups chicken stock
- 1/4 cup chopped green bell pepper (optional)
- 1 can (15 ounce size) tomato puree
- 1 teaspoon finely minced jalapeno pepper (optional)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper (optional)
- 1 teaspoon sugar
- 1 teaspoon chili powder (optional)
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon hot sauce (optional)
- 4 teaspoons flour
- 1/2 cup water
- 1 pound cooked chicken, cubed or pulled
- 1 cup cream
- 1/4 cup non-fat sour cream
- 8 ounces processed cheese, 1-inch cubes
- 10 (6-inch) colored or yellow corn tortillas, 1/4-inch strips, fried
- 2 avacados sliced (optional)
- fresh cilantro, roughly chopped (optional)
Southwestern Egg Rolls

Preheat oven to 450. Rub 1 tablespoon vegetable oil over chicken breast
- 2 tablespoons vegetable oil
- 1 skinless, boneless chicken breast half
- 2 tablespoons minced green onion
- 2 tablespoons minced tri-colored bell pepper
- 1/3 cup frozen corn kernels
- 1/4 cup black beans, rinsed and drained
- 2 tablespoons frozen chopped spinach, thawed and
- drained
- 1/2 tablespoon minced fresh parsley
- 1/2 teaspoon ground cumin
- 1/2 teaspoon chili powder
- 1/3 teaspoon salt
- 1 pinch ground cayenne pepper
- 3/4 cup shredded Monterey Jack cheese
- 1 pkg. egg roll wrappers
Steamed Chicken with Roasted Peppers and Prosciutto
