Cornbread and Sausage Stuffing

Preheat oven to 350 degrees
- 1 pound fresh pork sausage, casings removed, crumbled (plus giblets, diced; optional)
- 1 large onion, (about 2 cups), finely chopped
- 3 celery, finely chopped (1 1/2 cups)
- Coarse salt and ground pepper
- 2 pounds prepared cornbread, cut into 3/4-inch cubes (12 cups)
- 3 tablespoons finely chopped fresh sage
- 3 large eggs, lightly beaten
- 1 to 2 cups reduced-sodium chicken broth
CInnamon Roll Pancakes

To make the Cinnamon Filling: Mix the three ingredients together
- 1 c all-purpose flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1 c milk
- 1 Tbsp vegetable oil
- 1 lg egg, lightly beaten
- FOR THE CINNAMON FILLING
- 1/4 c butter, melted
- 1/4 c + 2T brown sugar, packed
- 1/2 Tbsp ground cinnamon
- FOR THE CREAM CHEESE GLAZE
- 2 T butter
- 1 oz cream cheese
- 1/2 c + 2 tbsp powdered sugar
- 1/4 tsp vanilla

- 1/2 C brown sugar

- 2 oz. slab bacon, cut into 1/2 cubes
- 1 hard-boiled egg, chopped
- 2 oz. chicken breast
- 1 Tbsp. olive oil
- Salt and pepper to taste
- Your favorite Balsamic Vinaigrette dressing
Chicken Bombs

Slice chicken breasts in half (like a hamburger bun), place between wax paper and pound until it’s 1/4” thick
- 5 boneless, skinless chicken breasts-makes 10 bombs:@)
- 5 jalapenos, sliced in half lengthwise and cleaned
- 20 slices bacon
- 4 oz cream cheese, softened
- 1 C colby jack or cheddar cheese, shredded
- S&P to taste
- 1 C BBQ sauce

- 2 cups plain nonfat yogurt
- 1/4 to 1/2 cup sugar

Carrot, Zucchini, Squash Ribbons

- 2 large carrots, peeled
- 3 large zucchini, peeled

- 2 tablespoons grape seed oil
- 1 garlic clove minced or sliced

- 1/4 cup orange juice

- 5 medium scallions
- 2/3 cup roasted mixed nuts
