Pecan-Caramel Spiders

- 1 1/2 cups toasted pecans
- 1 cup heavy cream
- 1 cup granulated sugar
- 1/2 cup light corn syrup
- 1 teaspoon vanilla extract
- 2 tablespoons unsalted butter, in pieces
- 1/4 teaspoon salt
- 5 ounces thin chocolate licorice (this is the best flavor combination) or black licorice strands (if you love black licorice), cut into 2-inch pieces at an angle
- 6 ounces semisweet chocolate, chopped
- 4 ounces milk chocolate, chopped
- Chocolate curls or jimmies, optional

- a sauce

- 1/2 cup extra virgin olive oil
- 1 tablespoon kosher or sea salt
- extra virgin olive oil, for brushing

Almost Derby Pie

- 1 Cup sugar
- 1 Cup light corn syrup
- 4 eggs
- 1/2 Cup (1 stick) butter, melted
- 1/4 tsp salt
- 1 Cup chopped pecans or walnuts (this is optional, but the traditional derby pie contains walnuts. The fundraiser pie contains pecans. It is also delicious without any nuts).
- 1 Cup chocolate chips
- 1 tsp vanilla extract
- 2 Tbsp quality bourbon (optional)

- For the Filling:
- 2/3 cup butter
- 2 onions, chopped
- 2/3 cup all-purpose flour
- 3 cups chicken broth
- 1 1/3 cup milk
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 2 4 oz. cans mushrooms
- 1 lb frozen green peas
- 1 lb frozen diced carrots
- 4 cups cooked, diced or shredded chicken meat
- For the Biscuit topping:
- 4 cups all-purpose flour
- 5 teaspoons baking powder
- 1 1/2 teaspoons salt
- 5 tablespoons shortening
