Heat 2 tablespoons of canola oil in a large skillet over medium heat
- 2 tablespoons canola oil
- 1/2 teaspoon crushed red pepper flakes
- 3 cups cooked leftover white rice, from Blackened Catfish recipe
- 1 leftover Blackened Catfish fillet, flaked with a fork
- 1 cup leftover Trinity Sauteed Vegetables
- 1 teaspoon Cajun seasoning
- 1 (15-ounce) can red kidney beans, drained and rinsed
- Salt and freshly ground black pepper, optional

This is a modified recipe of Creamy Crock Pot Macaroni and Cheese
- 2 lbs uncooked small pasta noodles, should have a cooking time around 13 minutes
- 2 (12 ounce) cans evaporated milk
- 1 1/2 cups half-and-half
- 6 cups milk
- 1/2 cup flour OR 1/4 cup corn starch
- 4 cups sharp cheddar cheese, shredded
- 2 cups mild cheddar cheese, shredded
- 16 ounces Velveeta cheese, diced
- 1 cup parmesan cheese
- 8 tablespoons salted butter, cut up
- 1 teaspoon onion powder
- 3/4 teaspoon garlic powder
- 1/2 teaspoon white pepper
- 1/2 teaspoon salt
