Refreshing Lemonade

This lamonade is easy to make and the mint really gives you that feeling of refreshment
- 1 cup sugar (can reduce to 3/4 cup)
- 1 cup water (for the simle syrup)
- 1 cup lemon juice (freshly squeezed)
- 3 to 4 cups cold water (to dilute)
- mint leaves (optional)

Pork Tenderloin with Mushroom Pan Sauce

- 1 lb (500 g) pork tenderloin
- 1/4 tsp (1 mL) each salt and pepper
- 2 tbsp (25 mL) vegetable_oil
- 2 large shallots, finely chopped (or 1 small onion, chopped)
- 8 oz (250 g) cremini mushrooms, sliced
- 1/4 tsp (1 mL) dried thyme
- Pinch each salt and pepper
- 1/4 cup (50 mL) white_wine or sodium-reduced chicken broth
- 1 cup (250 mL) sodium-reduced chicken broth
- 1 tbsp (15 mL) each butter, softened, and all-purpose_flour
- 3 tbsp (45 mL) chopped fresh parsley
Colcannon

A St. Patrick's day favorite, it's a mixture of creamy mashed potatoes and usually kale or cabbage
- 4 russet potatoes (2 to 2 1/2 pounds), peeled and cut into large chunks
- Salt
- 5-6 Tbsp unsalted butter (with more butter for serving)
- 3 lightly packed cups of chopped kale, cabbage, chard, or other leafy green
- 3 green onions (including the green onion greens), minced (about 1/2 cup)
- 1 cup milk or cream
Chicken Salad

- 2 cups cubed, cooked chicken meat
- 1/2 cup mayonnaise
- 1/2 teaspoon paprika
- 3/4 cup dried cranberries
- 1/2 cup chopped celery
- 1 green onions, chopped
- 1/4 cup minced green bell pepper
- 1/2 cup chopped pecans
- 1/2 teaspoon seasoning salt
- ground black pepper to taste
Broccoli Stir Fry with Ginger and Sesame

1. Toast the sesame seeds by first heating a small, stick-free sauté pan on medium heat
- 1 Tbsp sesame seeds
- 1/2 cup chicken stock (or vegetable stock for vegetarian option)
- 1 Tbsp soy sauce (use gluten-free soy sauce for gluten-free option)
- 1 Tbsp dark sesame oil
- Peanut, canola, or grapeseed oil, or some other high smoke-point cooking oil
- 1 pound broccoli florets, rinsed, patted dry, cut into bite-sized pieces
- 2 cloves of garlic, minced (about 1 Tbsp)
- 1 Tbsp minced fresh ginger

- 1/3 cup butter, softened
- 2/3 cup white sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1 3/4 cups all-purpose flour
- 1/3 cup unsweetened cocoa powder
- 2 teaspoons baking powder
- 1/2 cup miniature semisweet chocolate chips
- 1/4 cup chopped walnuts
- 1 egg yolk, beaten
- 1 tablespoon water
Cheesy Swiss Chard Gratin

1. In a small saucepan of boiling salted water, cook potato until tender, 10-12 minutes
- 1 potato (5 oz/150g), peeled and quartered
- 2 tbsp butter
- 1/4 cup diced onion
- 1 clove garlic, minced
- 1/4 cup all purpose flour
- 1 3/4 cupa milk
- 1/4 tsp cayenne pepper
- Pinch of salt, pepper and ground nutmeg
- 1/3 cup shredded Gruyere cheese
- 3 tbsp grated Parmesan cheese
- 2 1/2 cups shreded swiss chard
Orange Almond Biscotti

These biscotti are very low in fat but they are delicious
- 3-3/4 cups all-purpose flour
- 2 cups and 1 tablespoon white sugar
- 1-3/4 pinches salt
- 1 tablespoon and 1/4 teaspoon baking powder
- 3/4 cup and 1 tablespoon and 1 teaspoon sliced almonds
- 1 tablespoon and 2 teaspoons orange zest
- 5 eggs, beaten
- 1 tablespoon and 2 teaspoons vegetable oil
- 1/2 teaspoon almond extract

- 1 oz. tequila

- 4 dashes worcestershire sauce
- 1 oz. tequila COINTREAU
