Pineapple Pork Chops

1. Preheat oven to 400 degrees
- 1 to 1.25 pounds pork loin (boneless when I can get it), sliced into chops
- 1/4 cup reduced-sodium soy sauce
- 1 Tbsp brown sugar
- 1 tsp minced ginger (you can use fresh or just the powder)
- 1/2 tsp crushed red pepper flakes
- 1 8-oz can crushed pineapple
Chicken & Basil Calzones

- Cooking spray
- 2 garlic cloves, minced
- 1 pound ground chicken breast
- 3/4 cup prepared pizza sauce
- 1/4 teaspoon crushed red pepper
- 1/4 cup chopped fresh basil I used fresh and dried since I didn't have enough fresh
- 1 (13.8-ounce) can refrigerated pizza crust dough

- 2 tablespoons butter
- 3 tablespoons flour
- 2 cups whole milk, heated
- salt and freshly ground pepper
- 3 tablespoons extra-virgin olive oil, plus extra
- 1 medium onion, thinly sliced
- 1 clove garlic, minced
- 21 ⁄4 pounds sweet Italian sausage, casings removed, crumbled
- 1 red bell pepper, seeds and inner white ribbing removed, diced
- 1 yellow bell pepper, seeds and inner white ribbing removed, diced
- 1 carrot, diced
- 1 small zucchini, diced
- 1 ⁄4 cup dry white wine
- 2 cups canned crushed tomatoes
- 1 ⁄2 cup chicken stock, heated
- 3 sprigs thyme, chopped
- 3 sprigs parsley, chopped
- 1 pound lasagna
- 1 ⁄2 cup Parmigiano-Reggiano, freshly grated
Chicken Breasts with Green Chile-Almond Cream Sauce

Here we topped seared chicken breasts with a green chile cream sauce that was inspired by green mole
- 2 cups unsweetened almond milk (see Shopping Tip)
- 1/2 cup reduced-sodium chicken broth
- 3/4 cup chopped seeded fresh New Mexican green chiles
- 3 scallions, sliced, white and green parts separated
- 3 tablespoons slivered almonds, toasted (see Tip)
- 1 clove garlic, thinly sliced
- 3/4 teaspoon salt, divided
- 6 chicken breast cutlets or fillets (about 4 ounces each; see Tip)
- 1 tablespoon canola oil
- 2 tablespoons whipping cream (optional)
- 1 tablespoon sesame seeds, toasted (see Tip)
Baked Broccoli Mac & Cheese

1. Preheat the oven to 350°F (180°C)
- 1 pkg Whole Wheat Macaroni
- 1 bag Green Giant Valley Selections Cut Broccoli
- 1 ⁄3 cup Margarine
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp each salt, pepper and dried thyme
- 3 tbsp all-purpose flour
- 2 1⁄2 cups 2% milk
- 2 cups shredded, reduced-fat Cheddar cheese
- 1 tsp each Worcestershire sauce and Dijon mustard
- 1 cup fresh whole wheat bread crumbs
- 2 tbsp finely chopped fresh parsley
Creole Seasonings
