Baked Spaghetti

This yummy spaghetti casserole will be requested again and again for potlucks and family gatherings
- 1 (16 ounce) package spaghetti
- 1 pound ground beef
- 1 medium onion, chopped
- 2 (26 ounce) jars meatless spaghetti sauce
- 1/2 teaspoon seasoned salt
- 2 eggs
- 1/3 cup grated Parmesan cheese
- 5 tablespoons butter, melted
- 2 cups ricotta cheese
- 4 cups shredded mozzarella cheese
Ground Beef Casserole with Potatoes

1. Brown ground beef in a skillet with chopped onion, cook until onions are tender 2
- 1 1/2 lbs lean dround beef, browned
- 1/2 cup chopped onion
- salt and pepper
- 3 large potatoes, sliced
- 2 carrots, shredded
- 1 can cream of mushroom soup
- 1 cup shredded cheddar cheese
Summer Potato Salad

I love potato salad and was well pleased with this one
- 3 or 4 mid sized Russet potatoes
- 4 Tbsp juice from Kosher dill pickles
- 3 Tbsp finely chopped dill pickles
- 1/4 cup chopped parsley
- 1/2 cup chopped red onion
- 2 stalks celery, chopped
- 1 or 2 chopped scallions, including the greens
- 1-2 hard boiled eggs, chopped (optional)
- 1 medium carrot, finely chopped (optional)
- 1/2 red bell pepper, raw or roasted, chopped (optional)
- 1/2 cup mayonnaise
- 2 teaspoons Dijon mustard
- Kosher salt and freshly ground black pepper to taste
Beet Hummus

If you like beets, and you like hummus, you'll love this beet hummus
- 1/2 pound beets (about 4 medium sized beets), scrubbed clean, cooked, peeled, and cubed*
- 2 Tbsp tahini sesame seed paste
- 5 Tbsp lemon juice
- 1 small clove garlic, chopped
- 1 Tbsp ground cumin
- 1 Tbsp lemon zest (zest from approx. 2 lemons)
- Generous pinch of sea salt or Kosher salt
- Fresh ground pepper to taste
Chipotle Chicken Pizza

1. Preheat oven to 450°. 2
- 6 ounces cooked chicken, shredded (about 1-1/3 cups)
- 1/2 cup Hellmann's® Real Mayonnaise
- 6 Tbsp. shredded mozzarella cheese (about 3 oz.), divided
- 1 Tbsp. chopped fresh cilantro
- 1 Knorr® Chipotle MiniCube, crumbled
- 1 (12-inch) prebaked pizza crust, thin style
- 2 plum tomatoes, thinly sliced
- 1/2 cup thinly sliced red onion

- 1/2 cup (1 stick) cold butter or margarine, cut up
- 3 tablespoons cold water

- 1 package (7 ounces) BAKER'S ANGEL FLAKE Coconut (2 2/3 cups)

- grated cheese (any of your choice. I use marble)
- 1 can Campbell's Cream of Mushroom Soup
- milk (enough to soften soup)
- garlic powder
