Most Calamari recipes call for frying but this dish uses a healthier approach, baking
- TARTAR SAUCE:
- 1 cup of mayonnaise
- 2 tablespoons lemon juice
- 1 tablespoon sweet pickle or dill relish
- 1 tablespoon minced onion
- Salt and pepper to season
- CALAMARI:
- 1 pound calamari, cleaned and cut into rings
- 1 cup of flour, more if needed
- 2 eggs
- 2 cups panko
- 1/2 teaspoon granulated garlic per cup of panko (optional)
- Non-stick cooking spray
- Sea salt and fresh ground pepper to season

- 1 pound ground beef
- 4 medium tomatoes, seeded and diced
- 8 green olives, pitted and sliced into quarters
- 2 tablespoons of olive liquid
- 4 garlic cloves, chopped
- 1/4 cup raisins (softened by soaking in warm water for 20 minutes)
- 1 poblano chile or green bell pepper, seeded and chopped (optional)
- 2 jalapenos seeded and diced (optional)
- 1/2 an onion, diced

- Dough:
- 3 1/2 cups flour
- 1 cup sour cream
- 3/4 tsp baking powder
- 1 1/2 tsp salt
- 3/4 cup water
- 1 egg, room temperature
- Filling:
- 6-8 Potatoes
- 1 pkg Velveeta cheese
- 2 medium onions (sautéed)
- 8 slices of bacon, cooked and chopped
