Ground Chicken & Artichoke Stuffed Shells

Yummy stuffed shells
- 1 (12-ounce) box jumbo pasta shells (recommended: Barilla)
- 3 tablespoons extra-virgin olive oil
- 1/2 large yellow onion, chopped (about 1 cup)
- 3 cloves garlic, chopped
- 1 pound ground chicken
- 1/2 teaspoon kosher salt, plus 1/2 teaspoon
- 1/4 teaspoon freshly ground black pepper, plus 1/4 teaspoon
- 1 (8 to 10-ounce) package frozen artichokes, thawed and coarsely chopped I used canned
- 1 (15-ounce) container ricotta cheese
- 3/4 cup grated Parmesan
- 2 eggs, lightly beaten
- 1/4 cup chopped fresh basil leaves I used a lesser amount of dried
- 2 tablespoons chopped fresh flat-leaf parsley I used a lesser amount of dried
- 5 cups Arrabbiata Sauce or marinara sauce (store-bought or homemade) I used a 28oz jar
- 1 1/2 cups grated mozzarella (about 5 ounces)
Vegetable Side Dish

Lightly saute squash. When squash is tender, put it in a baking pan or casserole dish
- 3-4 zucchini or summer squash
- 1/2 c. bread crumbs
- 1 c. grated American, Cheddar, or Parmesan cheese

Greek Pizza

- 2 medium tomatoes
- 1 medium green bell pepper
- 1 cup, pitted black olives
- 100 grams, crumbled feta cheese
- 1 small red onion
- 1 cup, shredded Mozzarella cheese
- 1 cup, Tomato Sauce or enough to cover the pizza dough

- 2 slices good-quality white bread, crusts removed I used a soft whole grain bread
- 1/4 cup half-and-half I used fat-free half-and-half
- 1 pound ground chicken
- 1 egg
- 1/2 teaspoon salt
- 1/4 teaspoon fresh-ground black pepper
- 1/2 teaspoon dried dill
- 5 tablespoons butter, 3 of them at room temperature
- 1 cup dry breadcrumbs
