Tortilla Soup

Here's a version of chicken tortilla soup that's both super-easy and delicious
- 8 corn tortillas, halved and thinly sliced
- Canola or olive oil cooking spray
- 1 tablespoon canola oil
- 3 Anaheim or poblano peppers, diced
- 1 medium onion, diced
- 1 teaspoon ground cumin
- 1 pound boneless, skinless chicken thighs, trimmed and cut into 1-inch pieces (see Tip)
- 4 cups reduced-sodium chicken broth
- 1 14-ounce can diced tomatoes with green chiles
- 2 tablespoons lime juice
- 1/2 cup shredded sharp Cheddar cheese
- 1/4 cup chopped fresh cilantro
Pumpkin dip

* In a large bowl, beat the cream cheese and confectioners' sugar
- 1 package (8 ounces) cream cheese, softened
- 2 cups confectioners' sugar
- 1 can (15 ounces) solid-pack pumpkin
- 3 teaspoons pumpkin pie spice
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground ginger
- Apple and pear slices
Shepherd's Pie

You'll hook them for sure with this steaming sheperd's pie!
- 2 tsp cooking oil
- 1 1/2 lbs lean ground beef
- 1 large chopped onion
- 1 tbsp all-purpose flour
- 1 1/2 tsp salt
- 1/4 tsp pepper
- 1/3 cup + 3 tbsp milk
- 1 cup frozen peas
- 1 cup cooked and cubed carrots
- 1 tbsp ketchup
- 1 tsp worcestershire sauce
- 1 1/2 lbs potatoes, peeled, cut up for mash potatoes
- Water
- 3 tbsp hard margarine or butter
- 2 tbsp paprika
Easy Cheesy Egg & Tortilla Bake

This casserole is ideal to make ahead
- 19 oz (540 mL) no added salt canned black beans, drained and rinsed
- 1 1/2 cups (375 mL) Old El Paso* Thick'n Chunky Medium Salsa, divided
- 1 1/2 cups (375 mL) Egg Creations™Original, well shaken
- 3/4 cup (175 mL) sour cream
- 1 1/2 cups (375 mL) shredded old Cheddar cheese
- 1 pkg (311 g) Old El Paso* Smart Fiesta* Tortillas
- Chopped fresh coriander leaves (optional)

Crunchy Peanut Spring Rolls

1. Slice the chicken crosswise into very thin strips
- 2 Boneless Skinless Chicken Breasts
- 2 cups Fresh Shiitake Mushrooms
- 1 tbsp Margarine
- 2 tsp minced fresh gingerroot
- 2 cloves garlic, minced
- 1/2 tsp each salt and pepper
- 3/4 cup chopped Unsalted Peanuts
- 16 rice paper wrappers (8 1/2 in/21 cm diameter)

Minestrone with Endive & Pepperoni

Considering that this minestrone soup incorporates mostly frozen vegetables, it is remarkably savory and aromatic
- 1 tablespoon extra-virgin olive oil
- 1/2 cup chopped fresh or frozen (thawed) bell peppers, any color
- 5 cups reduced-sodium beef broth
- 1 1/2 teaspoons dried oregano
- 1 teaspoon dried thyme
- 2/3 cup whole-wheat elbow noodles or other small pasta
- 1 pound frozen mixed soup (or stew) vegetables (including potatoes, carrots, celery, onion), thawed, chopped
- 1 cup frozen baby lima beans, thawed
- 1 15-ounce can diced tomatoes with garlic and onion
- 1/2 cup diced pepperoni
- 3 cups lightly packed coarsely chopped curly endive or chard, tough stems removed
- Freshly ground pepper to taste
- Freshly grated Parmesan cheese for garnish
