Southwestern Black Bean Salad

In a large bowl, combine beans, corn, tomato, onion, scallion, cilantro, salt and pepper
- 15.5 oz can black beans, rinsed and drained
- 9 oz cooked corn, fresh or frozen (thawed if frozen)
- 1 medium tomato, chopped
- 1/3 cup red onion, chopped
- 1 1/2 - 2 limes, juice of
- 1 tbsp olive oil
- 2 tbsp fresh minced cilantro (or more to taste)
- salt and fresh pepper
- 1 medium hass avocado, diced
Homemade Basil Pesto

Heat a skillet (or pan) over medium-high heat; toast pine nuts until golden, tossing occasionally in the pan
- 1/4 cup pine nuts, lightly toasted
- 2 cups basil leaves, washed and packed
- 2 cloves garlic, peeled
- 1/3 cup grated parmesan cheese
- 1/3 cup olive oil
- salt to taste

Mushroom & Bacon Casserole

- 4 cups unsalted beef stock (such as Swanson)
- 3 cups water
- 8 center-cut bacon slices, chopped
- 1 cup chopped onion
- 1 tablespoon chopped fresh thyme
- 6 garlic cloves, minced
- 8 ounces sliced cremini mushrooms
- 1/2 teaspoon kosher salt
- 2 cups uncooked pearl barley
- 1/3 cup Madeira wine
- 4 ounces swiss cheese, shredded (about 1 cup), divided
- 1/2 cup chopped drained oil-packed sun-dried tomato halves
- 2 teaspoons lower-sodium soy sauce
- 1/4 teaspoon black pepper
- 1 (10-ounce) package frozen chopped spinach, thawed, drained, and squeezed dry

Creamed Spinach

If bulk spinach is used, pick it over to remove and discard any tough stems and blemished leaves
- 2 1/2 pounds spinach in bulk, or two 10-ounce plastic wrapped bags
- 1 tablespoon butter
- 1 tablespoon flour
- 1 cup milk
- 1/2 teaspoon freshly grated nutmeg
- Salt to taste, if desired
- Freshly ground pepper to tast
Sam's Favorite Chocolate Cake

Preheat oven to 350° F. Sift the flour, baking powder and salt together and set aside
- 3/4 cups cocoa
- 4 ounces semi-sweet chocolate
- 2 cups boiling water
- 1 cup unsalted butter, at room temp
- 1 1/2 cup sugar
- 4 eggs
- 2 teaspoons vanilla extract
- 2 1/4 cups flour
- 2 scant teaspoons baking powder
- 1 teaspoon salt
- 8 ounces semi-sweet chocolate
- 3/4 cups heavy cream
- 1 cup good quality sour cherry jam

- 1 1/4 cups Key lime juice
- 2 large eggs, lightly beaten
- 1/2 cup crème fraîche or sour cream
- 2 tablespoons powdered sugar
- Garnishes: grated lime zest and lime slices
