Potato Cheese Casserole

Cook potatoes in salted water until tender; peel and shred
- 2 lbs. potatoes
- 1 T. butter
- 1 small carrot, shredded
- 1/2 cup chopped onion
- 1 1/2 cups sour cream
- 1 1/2 cups shredded Swiss Cheese, divided
- 2 T. minced parsley
- 1 t. salt
- 1/8 t. pepper
- Paprika
Blueberry Popovers

Popovers are crisp on the outside, hollow and delicate on the inside – and not too sweet
- Makes 6 to 8 large popovers.
- Non-stick vegetable cooking spray
- 1 cup all-purpose flour
- 1/4 teaspoon baking powder
- Pinch of salt
- 2 tablespoons SPLENDA granulated
- 2 large eggs
- 1 cup 1% milk
- 1/2 cup fresh blueberries
Southwest Slow Cooker Pork Chops

Sprinkle pork chops with peppered seasoned salt
- 4 bone-in center-cut pork loin chops (1/2" thick)
- 1 teaspoon peppered seasoned salt
- 1 cup frozen corn
- 1/2 cup chunky salsa
- 16 oz. can baked beans, undrained
Super Juicy Meatloaf - Nik's

Pre-heat oven to 350 degrees
- Your preferred seasonings:
- 1 lb. 85/10 ground meat
- 1 c. diced onions
- 1 c. grated zucchini
- Any other chopped veggies you like
- salt, pepper, a bit of garlic powder, a pinch of sage and a little bit of red pepper flakes)
- 1 egg
- 1 tbsp. steak sauce
- 1 c. no-sugar added and/or low-sodium ketchup
- 1/4 c. steak sauce (yes, in addition to the tablespoon above)
Pineapple Fruit Salad

Mix and chill. *You can use less Cool Whip if you wish
- 1 large can crushed or tidbits pineapple – do not drain
- 1 can chunky fruit cocktail or whatever fruit you like, drained
- 1 pkg. sugar free pudding mix (vanilla, white chocolate, pistachio)
- 8 oz. carton Cool Whip*, thawed
Danish Apple Pie

- 1 egg
- 3/4 cup sugar
- 1/2 cup flour
- 1 tsp. baking powder
- dash of salt
- 1/2 tsp. vanilla
- 2 cups diced, peeled
- (sauted in 1 T. butter)
- 1/2 cup walnuts

- 2 large russet potatoes
- 2 tablespoons finely minced celery (1/2 stalk)
- 1 tablespoon finely minced onion
- 1 tablespoon grated carrot (1/4 carrot)
- 2 cups chicken stock or broth
- 1 teaspoon salt
- 2 teaspoons white vinegar
- 2 tablespoons flour
- 1 1/2 cups milk
- 1 cup plus 1 tablespoon shredded Cheddar cheese
- 1 tablespoon shredded Monterey Jack cheese
- 2 slices bacon, cooked
- 1 tablespoon chopped green onion

- 2 oz unsweetened chocolate squares, melted & cooled
- 1/2 cup sugar substitute
- 1 t. vanilla extract
- 1/2 cup chopped pecans
