Nik’s Crustless Pumpkin Cheesecake

Arrange your oven racks so there is a rack at the bottom and one in the middle
- 16 oz. low-fat cream cheese (NOT fat-free), softened
- 6 oz. unflavored Greek yogurt
- 1 (15 oz.) can of pumpkin puree (NOT pie filling!)
- 1/2 – 3/4 c. Splenda (or your favorite sweetener’s equivalent of 3/4 c. sugar)
- 1 tsp pumpkin pie spice
- 1 tsp. pure vanilla extract
- 3 egg whites
- Optional: 2 servings vanilla or unflavored protein
Sauteed Okra with Garlic

Heat oil in large skillet
- 4 t. olive oil
- 1 onion, finely chopped
- 3 10-oz. bags frozen okra, thawed
- 3 large garlic cloves, minced
- 1 T. red wine vinegar
- 1/2 t. salt
- 1/2 t. freshly ground pepper
- 2 T. chopped fresh cilantro

Deep Dish Quiche Pizza

Beat cream cheese & eggs until smooth
- 4 oz cream cheese
- 3 eggs
- 1/4 cup parmesan cheese
- 1/3 cup heavy cream
- 1/2 t. oregano
- 2 cups shredded Italian cheese
- 1/4 t. garlic powder
- 1/4 cup tomato sauce
- 1 cup shredded mozzarella
- 20 slices pepperoni
15 Bean Soup

Serves 14-16 Cook time: 3 hours
- 1 package of Hurst’s® 15 Bean Soup
- 1 pound of diced ham or smoked sausage
- 1 cup of diced onion
- 2 tablespoons of garlic
- 8 cups of chicken broth
- 1 14.5 ounce can of diced fire roasted tomatoes
- 2 16 ounce bottles of roasted garlic salsa (I use Newman’s Own)
- Juice of one lemon
- 1/2 teaspoon of onion powder
- 1/2 teaspoon of garlic powder
- Shredded cheese of choice (I use Mexican 4 cheese or taco cheese)
- Scallions

- 1 Pillsbury pizza dough
- 10 oz. boneless, skinless chicken breast, grilled & chopped
- 10 strips of bacon
- 1 cup shredded mozzarella cheese
- 1 medium onion, chopped
- 2 T. chopped green onion
- 6 T. high quality Caesar salad dressing, divided
- 1/2 cup parmesan cheese
