WHITE CHICKEN CHILI

Makes twelve 1-cup servings It’s as spicy as you want it and full of protein-packed chicken and fiber-ful beans
- 1 medium onion, chopped
- 2 garlic cloves, minced
- 2 tablespoon olive oil
- Two 15-ounce cans Cannellini or white beans, drained
- 2 tablespoons flour
- 1 cup corn
- 1 teaspoon cumin
- 4 cups diced, cooked chicken or turkey (or veggie: Morningstar chicken product – see note above)
- Two 14.5-ounce cans chicken or vegetable broth
- One 4.5-ounce can diced green chilies
- 1-3 teaspoons chili powder (dash of cayenne,too, if you want!)
- 1/2 teaspoon oregano
- Kosher salt and freshly ground black pepper
Reese's Peanut Butter Cups (Only Better)

1.Combine the graham cracker crumbs and the powdered sugar in a large bowl
- 1 1/2 cups graham cracker crumbs
- 3 1/4 cups powdered sugar
- 1 1/2 cups creamy peanut butter
- 1 cup salted butter, melted
- 1 bag (12 oz) semi sweet chocolate chips
- 2 tablespoons butter*
Chocolate Balls

Melt shortening and chocolate together; cool
- 1/2 cup shortening
- 2 sq. unsweetened chocolate
- 1 cup sugar
- 2 eggs
- 2 t. vanilla
- 2 cups flour
- 2 t. baking powder
- 1/2 t. salt
Honey Roasted Potatoes

Preheat oven to 375. Lightly coat an 11x7” baking dish with Pam
- 1 lb. red potatoes, quartered
- 2 T. diced onion
- 2 T. melted butter
- 1 T. honey
- 1 t. dry mustard
- 1 pinch salt
- 1 pinch black pepper
Ham Glaze

•In a skillet, combine the brown sugar, flour, mustard, ginger ale and vinegar
- 1/4 cup packed brown sugar
- 1-1/2 teaspoons all-purpose flour
- 1/2 teaspoon ground mustard
- 2 tablespoons ginger ale
- 1 tablespoon cider vinegar
- 2 boneless fully cooked ham slices (1/2 to 3/4 pound and 1/2 inch thick)
Cowboy Beans

Serve with shredded cheddar, chipotle hot sauce, and sour cream to add additional layers of flavor
- 1 tablespoon olive oil
- One large onion, diced
- 2 garlic cloves, sliced
- 15 ounce can black beans, drained
- 15 ounce can pinto beans, drained
- 15 ounce can white beans, drained
- 16 ounce jar of salsa
Pecan Pie - Sugar Free

Preheat the oven to 350°F
- 3 large eggs
- 3/4 cup Splenda Granular
- Pinch of table salt
- 1 teaspoon vanilla extract
- 4 tablespoons salted butter, melted
- 3/4 cup Joseph’s Sugar Free Maple syrup*
- 1/2 cup chopped pecans, plus 10 halves
- One 9-inch unbaked pie shell, not deep dish
- Whipped cream sweetened with Splenda

- 8 ounces low fat cream cheese
- 2 small boxes sugar free lime Jello
- 2 cups hot water
- 2 small cans crushed pineapple, drained (juice only)
- 1/2 cup chopped pecans

- 1 (7 oz) jar marshmallow cream
- 2 cups semi-sweet chocolate chips
- 1 cup chunky peanut butter
- 3 cups Rice Crispies
