Momma's Hot Fudge Pudding

Serve hot over vanilla ice cream
- 1 cup flour
- 2 t. baking powder
- 1/4 t. salt
- 3/4 cup sugar
- 2 T. cocoa powder
- 1/2 c. milk
- 2 T. shortening, melted
- 1 cup chopped nuts, optional
- 1 cup packed brown sugar
- 1/4 cup cocoa powder
- 1 3/4 cups hot water
Sweet & Sour Green Beans

•In a skillet, cook bacon until crisp; drain, reserving 2 tablespoons of drippings
- 4 bacon strips
- 1/2 cup chopped onion
- 2 tablespoons all-purpose flour
- 3/4 cup water
- 1/3 cup cider vinegar
- 2 tablespoons sugar
- 6 to 8 cups green beans, cooked and drained

Heat oven to 350°F. Spray bottom only of 13×9-inch pan with cooking spray
- Cookie Base
- 1 pouch (1 lb 1.5 oz) Betty Crocker® peanut butter cookie mix
- 3 tablespoons vegetable oil
- 1 tablespoon water
- 1 egg
- Filling
- 1/3 cup light corn syrup
- 3 tablespoons butter or margarine, softened
- 3 tablespoons peanut butter
- 1 tablespoon plus 1 1/2 teaspoons water
- 1 1/4 teaspoons vanilla
- Dash salt
- 3 1/2 cups powdered sugar
- Caramel Layer
- 1 bag (14 oz) caramels, unwrapped
- 2 tablespoons water
- 1 1/2 cups unsalted dry-roasted peanuts
- Topping
- 1 bag (11.5 oz) milk chocolate chips (2 cups)
Mexican Polenta Casserole

Brown onion and meat. Add spices (or use packet of taco seasoning) and tomato sauce
- 1 medium chopped onion
- 1 lb. 93% lean ground beef
- 2 tsp. cumin
- 1 tsp. chili powder
- 1-2 cups tomato sauce
- 1 tube prepared polenta or about 2 cups cooked)
- 1 lb. can spicy refried FF beans
- 6 slices jalapeno Mex-Kaas cheese
S'mores Protein Pudding Pie - Nik's

(This yields a family-sized or share-able pie
- 2 (1 oz.) boxes sugar-free chocolate pudding mix
- 3 scoops unflavored protein powder
- 1 T. cocoa
- 2 -1/4 c. milk
- 1/4 c. Torani Sugar-free S'mores flavored syrup
- 1 tub (8 oz.) whipped topping (low-fat, fat-free, your choice)
- 1 crumb pie crust
