Dissolve Jello in boiling water; cool slightly
- Traditional graham cracker crust
- 1 pkg. Sugar-free lime Jello
- 2/3 c. boiling water
- 1 8 oz pkg. cream cheese
- 1 c. cottage cheese
- 2 T. Splenda
- 1 small tub Cool Whip, thawed
Strawberry Icebox Pie

- Crust
- 1 2/3 cups graham crackers, crushed
- 1/3 cup sugar
- 6 T. butter, melted
- 1/2 t cinnamon
- Pie Ingredients
- 1 lb. cream cheese, room temperature
- 2/3 cup sugar
- 1 t. vanilla
- 16 oz. container whipped topping
- 1 1/2 qts. strawberries, sliced
Shelly's Mini Corn Dog Muffins

Preheat oven to 350. Mix together dry ingredients
- 1/2 cup Masa Harina (corn flour, not meal)
- 1/4 cup Multigrain Pancake Mix
- 1/4 cup Shredded Cheese (any type)
- 1 teaspoon Baking Powder
- 1 teaspoon Sea Salt
- 1 Egg, beaten
- 1/2 cup Milk
- 1 Tablespoon Oil or melted Butter (any you prefer)
- 12 Cocktail Dogs
Cinnamon Sweet Butternut Squash

Preheat oven to 375F. Place squash halves in a 3-1/2 quart baking dish, trimming ends to make fit if need be
- 1 butternut squash, cut in half and seeds scraped out
- 2 Tbsp butter, melted
- 3 Tbsp light brown sugar
- 1/8 tsp nutmeg
- 1/4 tsp cinnamon
- 1/4 tsp salt
Pistachio Pineapple Salad

Mix all ingredients together and chill
- 1 (3 oz.) box sugar free Pistachio pudding mix
- 1 20-oz. can crushed pineapple, canned in juice, undrained
- 1 cup Cool Whip
- 2 cups yogurt
- 1/4 cup chopped walnuts
Mandarin Orange Cake

Beat eggs; add oranges and dry ingredients, beating until thoroughly mixed using low speed so flakes of orange show
- 2 cups sugar
- 2 cups flour
- 1/2 t. salt
- 2 eggs
- 2 (11 oz.) cans Mandarin oranges, well drained
Mexican Casserole

Mix all ingredients except cheese and put in 9x13 sprayed casserole dish
- 2 Cups Pinto Beans, Cooked
- 10 3/4 Ounces Cream of Mushroom Soup, 98% Fat Free
- 10 3/4 Ounces Cream of Celery Soup, Reduced Fat
- 22 Ounces Rotel Tomatoes -- 2 cans, drained
- 6 Ounces Chicken -- diced
- 6 Ounces Velveeta Light -- diced
- 1/3 Cup Onion -- chopped
Hobo Pie

Crust: Blend together and spread in the bottom of pie plate 9”
- The crust:
- 1 cup self-rising flour (can substitute almond, soy or wheat flower)
- 1 stick butter- melted
- 1 cup finely chopped pecans

- 1/4 cup + 2 Tbsp unsweetened applesauce
- 1 cup pumpkin puree
- 1/2 cup plain non-fat yogurt
- 1 egg
- 1/2 cup raw sugar + 1 Tbsp for topping
- 2 Tbsp chopped walnuts, for topping
- 1 Tbsp rolled oats, if desired

- Salt and pepper
- 2 tablespoons Extra Virgin Olive Oil
