Refried Beans (Pioneer Woman)

Rinse the beans thoroughly, then place them in a large pot with the bacon
- 6 cups dried pinto beans
- 4 slices thick-cut bacon or salt pork, ham hock or diced ham
- 1 tablespoon chili powder
- 1 teaspoon salt, plus more if needed
- 2 teaspoons black pepper, plus more if needed
- 1/2 stick butter (bacon grease, lard or shortening will work)
- 1 onion, diced
- 2 cups grated sharp Cheddar
- Sliced jarred jalapenos

- 1 cup plus 2 tablespoons cake flour
- 1 cup all-purpose flour
- 3/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup plus 2 tablespoons buttermilk
- GLAZE:
- 2 ounces unsweetened chocolate, chopped
- 4 teaspoons butter
- 1/2 cup whipping cream
- 1 cup confectioners' sugar
Apple Pie In A Bag

Preheat oven to 400. Pare, core and quarter apples

Spinach Salad With Hot Dressing

Peel the eggs and set aside
- 3 hardboiled eggs
- 4 slices bacon
- 1 small red onion
- 1 pkg. white buttom mushrooms (optional)
- 3 T. red wine vinegar
- 2 t. sugar
- 1/2 t. Dijon mustard
- dash of salt
- 8 oz. baby spinach, washed, dried & stems removed
Nik's Salted Butter Toffee Protein Oatmeal

In a bowl combine your oats, protein powder and syrup until thoroughly mixed
- 1/2 c. quick oats
- 1/4 c. Torani sugar-free English Toffee syrup
- 1 scoop of your favorite protein
- 1 c. skim milk (use twice the amount of milk than oatmeal)
- A small pat of butter or low-calorie butter substitute
- A generous pinch of salt (this works especially well if you have large-crystal salt)
Chicken Chile Relleno Rolls Recipe

1.Preheat oven to 350 degrees
- Filling:
- Vegetable cooking spray
- 3/4 pound chicken breast halves (4 pieces)
- Kosher salt and black pepper
- 3/4 cup shredded Colby Jack cheese
- 3 tablespoons finely minced onion
- 3 tablespoons minced fresh cilantro
- 1 teaspoon chili powder
- One 4-ounce can diced green chilies
- Dredge:
- 1 egg, beaten
- 1 tablespoon milk
- 1/4 fine dry bread crumbs
- 1 tablespoon flour
- 1 teaspoon chili powder

- 1/4 tsp. nutmeg
- 1/4 tsp. salt

- 2 tblsp. brown sugar

- 2 oz. slivered almonds, finely chopped & toasted

- 1 box sugar free chocolate pudding mix
- 2 servings Mint Cookie protein powder
- 1 t. decaffeinated expresso
- 1 T. cocoa powder
- 2 cups milk
- 4 T. whipped cream
- 2-3 sugar free peppermints(opt.)
