- 1 medium yellow onion, chopped
- 1 large red bell pepper, chopped
- 5 cloves garlic, chopped
- 2 (14-ounce) cans chick peas, drained
- 1 teaspoon red chili flakes
- 1 teaspoon ground cumin
- 1 egg
- 1 tablespoon salt
- 1/2 tablespoon freshly ground black pepper
- 5 tablespoons flour
- 2 cups freshly chopped parsley leaves
- 3/4 cup freshly chopped cilantro leaves
- Pitas, for sandwich
- Toppings: shredded lettuce and chopped tomato, sliced cucumbers
- Yogurt Dipping Sauce, recipe follows
- 1 cup plain yogurt
- 1/2 tablespoon lemon zest
- 1 tablespoon freshly squeezed lemon juice
- 1 tablespoon salt
- 1 tablespoon freshly chopped cilantro leaves
- 2 teaspoons freshly chopped parsley leaves
- 1/2 teaspoon ground cumin
- Mix ingredients together in a small bowl and chill until ready to use.
- Yield: 1 cup

- 4 slices cooked bacon, chopped
- 1 pound ground chuck

- 4 large hamburger buns, split
- Ketchup, mayonnaise, and mustard, for serving
- Lettuce, sliced tomato, onion, and avocado, for serving

- 1 1/2 lb boneless beef ribeye steaks
- 1/4 teaspoon salt
- 1/8 teaspoon pepper

- 1/4 cup crumbled feta cheese
- 1/4 cup Italian bread crumbs

- 6 Baking potato (peeled and cut into large pieces)
- White vinegar
- Sugar
- 1/2 stalk Celery
- 1 tsp onion powder

Preheat oven to 400 degrees F

- 2 pounds baby Yukon gold potatoes
- 1 tub bocconcini, bite size fresh mozzarella in water
- 2 pounds Italian hot or sweet fresh chicken, turkey or pork sausage, bulk if available
- 1 1/2 pounds broccolini
- 1 head garlic
- 1 (28-ounce) can San Marzano tomatoes
- 1/2 cup chicken stock or milk
- 1 tub grated Pecorino Romano
- 1 tub good quality fresh pesto from the refrigerated cases of the market
- On hand:
- Extra-virgin olive oil, for liberal drizzling, 4 to 5 tablespoons total
- Salt and freshly ground black pepper
Chicken or Turkey Spanakopita Burgers and Fries with Yogurt Dip(Rachael Ray)

Preheat oven to directions on the package and bake fries until crisp
- Topping:
- 1 package store-bought frozen fries, any variety
- 1 tablespoon extra-virgin olive oil, 1 turn of the pan, plus some for drizzling
- 1 tablespoon butter
- 3 cloves garlic, 2 chopped, 1 crushed
- 1 red onion, 1/2 chopped, 1/2 thinly sliced
- 1 box, 10 ounces, frozen spinach, defrosted
- 2 teaspoons dried oregano, lightly crushed in the palm, divided
- 1/4 pound feta crumbles
- 1 1/3 pounds ground chicken or ground turkey breast, 1 package
- 1 tablespoon grill seasoning (recommended: Montreal Steak Seasoning by McCormick)
- 1/3 seedless cucumber, thinly sliced lengthwise, plus 1 small, 2-inch piece of cucumber peeled, trimmed and chopped
- 2 plum tomatoes, thinly sliced lengthwise
- Salt and pepper
- 1 1/2 to 2 cups good quality plain yogurt, look for Greek yogurt
- 1/2 lemon, juiced
- 1 cup arugula, coarsely chopped or shredded
- 4 crusty rolls, split
- 2 roasted red peppers, drained
- 1/4 cup flat-leaf parsley, a generous handful
- 1/4 cup 10 to 12 pitted kalamata olives
- Hot pepper rings or pepperoncini, optional
