East Hampton Clam Chowder

Melt 4 tablespoons (1/2 stick) of the butter in a large heavy-bottomed stockpot
- 12 tablespoons (1 1/2 sticks) unsalted butter, divided
- 2 cups chopped yellow onions (2 onions)
- 2 cups medium-diced celery (4 stalks)
- 2 cups medium-diced carrots (6 carrots)
- 4 cups peeled medium-diced boiling potatoes (8 potatoes)
- 1 1/2 teaspoons minced fresh thyme leaves (1/2 teaspoon dried)
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 1 quart (4 cups) clam juice
- 1/2 cup all-purpose flour
- 2 cups milk
- 3 cups chopped fresh chowder clams (1 1/2 pounds shucked clams)
Mustard Vingarette Dressing

In small bowl combine Vinegar, salt, parsley, mustard and garlic
- 1 Tbsp red wine vinegar
- 1/4 tsp salt
- 1 tsp dijon mustard
- 1 garlic clove minced
- 1 Tbsp minced parsley
- 1 Tbsp & 1 tsp olive oil

Cut Biscuits into 4 pieces each
- 1 tubes refrig biscuits
- 4 tablespoons butter melted
- 1/2 cup sugar
- 1.5 teaspoons cinnamon
- 1/2 cup brown sugar
- 1/2 cup butter cubed
- 1/2 cup corn syrup
- 1/4 cup chopped walnuts or raisins (optional)
Banana Stuffed French Toast

Preheat oven to 350 degrees F
- 4 tablespoons butter
- 1/4 cup light brown sugar
- Pinch ground cinnamon
- 3 ripe bananas, peeled, cut into 1/2-inch-thick rounds
- 4 ounces cream cheese, room temperature
- 1 large unsliced loaf French bread, bread cut into 8 slices
- 4 large eggs
- 1/2 cup heavy cream
- 1 1/2 cups whole milk
- 2 teaspoons ground cinnamon
- 1 teaspoon rum extract
- Nonstick cooking spray
- Confectioners' sugar, for garnish
- Maple syrup, for garnish

Mix all ingredients. Roll into small balls; flatten with bottom of glass dipped in sugar

- Salt
- 1 pound bucatini pasta
- 1 1/2 pounds large shrimp, peeled and deveined, tails off

- 2 lemons, 1 sliced and 1 juiced
- 1 stick butter
- 6 cloves garlic, finely chopped
- 1 teaspoon red pepper flakes

- 2 tablespoons extra-virgin olive oil
- 1 teaspoon fennel seeds
- 1/2 cup white wine or white vermouth

- 1 small bunch flat-leaf parsley, leaves removed from stems
