Caribbean Jerk Chicken wings

Preheat grill to medium-high
- Sauce:
- 2 cups store bought mustard-based BBQ sauce (recommended: Cattleman's Gold Sauce)
- 2 tablespoons soy sauce
- 1 (6-ounce) can crushed pineapple
- Salt and pepper
- 1/3 cup brown sugar
- 1 teaspoon ground ginger
- Store bought jerk seasoning
- 18 chicken wings
Mini Chicken Sausage Meatballs with Gnocchi and Tomato Sauce(Rachel Ray)

Preheat oven to 400 degrees F
- Salt
- 1 pound gnocchi ( potato dumplings) from refrigerated or frozen foods section of market (Or use tortillini)
- 1 1/2 pounds ground chicken
- 1 tablespoon grill seasoning (recommended: Montreal Steak Seasoning by McCormick)
- 1 teaspoon fennel seeds, 1/3 palm full
- 1/4 cup tender sun dried tomatoes (available in pouches or tubs in produce section)
- 20 leaves fresh basil, divided
- 2 tablespoons extra-virgin olive oil, plus some to drizzle
- 1 medium onion, finely chopped
- 1/2 teaspoon crushed red pepper flakes
- 1 (28-ounce) can crushed tomatoes
- 1 (8-ounce) can tomato sauce
- Grated Parmigiano-Reggiano or Romano, to pass at table

Pre heat oven to 350. Mix everything except marhmellows in a bowl to combine
- 1 cup firlmy packed brown sugar
- 5 TBS OJ
- 2 TBS groung cinnamon
- 2 TSP vanilla
- 4 cups sweet potatos (peeled and cut into chunks)
- 1 bag mini marshmellows
Simple yet wonderful dip

Mix everything in a bowl let sit for 1 hour and serve with tortilla chips
- 1 Large container sour cream
- 1 package of cheddar cheese
- 2 packages of real bacon bits
Breakfast Enchiladas with Red Sauce

Preheat oven to 375 degrees F
- For the Red Sauce:
- 2 tablespoons vegetable oil
- 1/2 cup diced onion
- Salt
- 2 cloves garlic, crushed
- 1 teaspoon ground cumin
- 2 tablespoons tomato paste
- 10 Roma tomatoes, seeded and chopped (about 3 cups)
- 1 cup chicken broth
- For the turkey sausage:
- 1 pound ground turkey
- 1 clove garlic, minced
- 1 jalapeno, seeded and minced
- 3 tablespoons light brown sugar
- 1 teaspoon red pepper flakes
- 1 teaspoon salt
- 1 teaspoon chopped fresh sage leaves
- 1 teaspoon chopped fresh thyme leaves
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon black pepper
- 2 tablespoons vegetable oil
- 3 Roma tomatoes, seeded and chopped
- 1/4 cup freshly chopped cilantro leaves
- For the scrambled eggs:
- 8 eggs
- 2 tablespoons milk
- 2 tablespoons butter
- 8 (8-inch) flour tortillas, warmed
- 3/4 cup shredded Cheddar
- 3/4 cup shredded Monterey jack
- 1 cup sour cream
- Sunny's Refried Beans, recipe follows
- Special Equipment: 10 by 12-inch baking dish

For the Philly-Rito!: In a saute pan over medium-high heat, add the oil and onions
- Sour Cream Cilantro Sauce:
- 1 cup sour cream
- 1 small bunch fresh cilantro, chopped
- 1 tablespoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Philly-Rito!:
- 3 tablespoons olive oil
- 1 yellow onion, diced
- 2 pounds sirloin, thinly sliced
- 1 tablespoon garlic powder
- 8 ounces shredded mozzarella
- 8 slices American cheese
- 1/2 jar roasted red peppers, drained, julienned
- Salt and freshly ground black pepper
- 4 (12-inch) flour tortillas
- 1 avocado, mashed
- For the sauce: Mix the ingredients until well combined.

- 1 small shallot, finely chopped

- 1 teaspoon Neely's Dry Rub seasoning
- 1 tablespoon Worcestershire sauce
- 2 teaspoons salt
- Freshly ground black pepper
- Butter
- 6 brioche buns
- 6 slices pepper jack cheese
- 12 slices smoked apple wood bacon, fried crisp
- 1/2 cup Neely's "Secret Sauce", recipe follows
- 1 pint cole slaw (recommended: Neely's Cole Slaw)
- 2 beef steak tomatoes, sliced
